Panera Bread – Summer 2012 Updated Information

After doing some behind-the-scenes work on my blog last week, I noticed that many people find my blog by searching for gluten-free Panera Bread information.  Panera Bread has offered gluten-free choices for years, but they have never had any gluten-free baked goods on the menu.  I emailed them last week to get the current list of their menu items that are free of gluten and will be sharing them below.  Since Panera Bread has predominantly bread items, there is a risk of cross-contamination.

Did you remember to Spring forward Sunday? I can’t believe it is this time already!  I am so excited about it being light later, that I really don’t care about the hour of lost sleep.  Make sure to ask me how I feel about that in a couple of weeks when my schedule is all screwed up, okay?

With Spring, comes St. Patrick’s Day and Easter. I don’t quite celebrate St. Patrick’s Day the way I used to, and my body thanks me for that.  This St. Patrick’s Day, perhaps I’ll indulge in some green eggs & ham or Pistachio Cheesecake (just happens to be green), instead of green beer.

Healthy Take on Tuna Salad – Avocados!

I am always looking for a way to make my current meal choices healthier. This not only helps my body, but it helps me to get out of a rut that I sometimes seem to fall in with foods.  I find something that I like and I like to eat it a lot.  Sometimes daily.  Tuna melts are one of those favorites.  In addition to limiting tuna to 2-3 times per week, I don’t know that I need melted cheese & mayo on a regular basis.

Avocados were on sale this week when I went grocery shopping – 5 for $5.00.  They were the big ones, too, not the tiny ones.  I wanted to incorporate avocado into my lunch, but knew I needed more protein, so the avocado tuna salad was born.

Welcome to Monday, December 12, 2011.  Only 13 days until Christmas!  For all of you out there (this includes me) who haven’t finished your shopping, it is time to get busy!   Right now I am out running 8-10 miles to help motivate myself to knock out the rest of my shopping later on today.  Not sure yet if that will include in person or online shopping – it depends on how I feel.

With Hannah home sick with the stomach flu, I had plenty of time to catch up on all things online.   I found some great gluten-free tidbits and plan to share one of them now with you guys! Are you ready? Ta-da….

Nationwide Children’s Hospital Hosts 24th Annual Celiac Conference

For the 24th year in a row, Nationwide Children’s Hospital will be hosting  the Celiac Conference. The conference is a great place to  mingle, shop and learn more about Celiac Disease and the gluten-free diet.   The conference will take place on Saturday, October 29, 2011 from 7:30 AM  until 4:00 PM.  There will be separate educational tracks for adults, teens & school-age children.

gluten free california pizza kitchenEarlier this summer California Pizza Kitchen debuted gluten-free pizza on their menu. I was giddy. I loved CPK pre-gluten-free and couldn’t wait to go back and try their new pizza. Well,we did,and it was great,but our spirits were quickly dampened by the news that there could be major cross contamination issues going on in the kitchen.

I decided to go back and investigate to see what was going on and whether what I had heard about their procedures was indeed true. I was saddened by what I found out. While it had appeared that CPK went to great lengths to add the gluten-free pizza to their menu,they didn’t consider some of the most important issues. Cross contamination is real and can be very serious. Sure,some of those with Celiac Disease don’t react right away (or even at all),but some do and it isn’t pretty. This doesn’t even take into consideration those Read More »

As a runner I have learned the importance of properly fueling my body.

Skimping on calories & nutrients hurts performance and can hurt your body, too. Carbohydrates are important to supply muscles with glycogen for exercise and a snack of protein & carbs is important after running to help refuel & repair muscles. It imperative to begin this process as soon as possible after a run, but absolutely within 30 minutes.

I have been a little lax on refueling recently,but that has to stop. My current,soon-to-be history, routine for my long runs involved meeting up with my MIT group, running, socializing, driving home (with a coffee detour) and then eating breakfast. By the time I was actually sitting down to eat it was easily 1+ hours later. Not good.
