Celi-ACT, a support group for families with one or more members affected by gluten intolerance, is hosting its 3^rd annual Gluten Free Vendor Fair on Saturday, March 12, 2011 from 11 a.m. until 3 p.m at a new location in the Jacobs Building at Chilhowee Park & Exposition Center in Knoxville.

Twenty years ago, doctors told Jerry Shafir that his baby daughter, Kate, had celiac disease.

In 2007, when the FDA recommended a standard for gluten free foods, Shafir, who owns Kettle Cuisine, applied his expertise in the soup industry and experience in the celiac disease community to develop gluten-free versions, so Kate and everyone on a gluten-free diet could enjoy the same delicious, hearty and nutritious foods that other people take for granted.

The result was an impressive line of 10 different soups, chilies and chowders, six of which we tried – and loved: New England Clam Chowder, Angus Beef Steak Chili with Beans, Tomato Soup with Garden Vegetables, Thai Curry Chicken Soup, Chicken Chili with White Beans, and Chicken Soup with Rice Noodles. Rich Products, a food service business serving colleges and universities, schools from kindergarten through 12th grade and restaurants, had a busy 2010 with projected revenues of $2.9 billion. A report in Business First shows how 2011 should be even busier, with more than $3 billion in revenues due to acquisitions and expansions.  Gluten-free products are expected to play a part.

Rich Products is based in Buffalo with 1,300 local employees. The company has operations in over 100 countries. It expects to expand by about 10 percent annually in China and is moving into new markets like Turkey and could grow in the Philippines and Indonesia.
