Corn tortillas are a staple in my diet. But, finding tortillas that are gluten-free can be difficult. In fact, many corn tortillas, even gluten-free varieties, are made in facilities that also produce wheat tortillas.

That’s why I was happy to find this SUPER EASY corn tortilla recipe at Simplyrecipes.com!

The recipe is simple. Two cups of masa harina corn flour and up to two cups of water make 16 to 18 tortillas.

General Mills Recalls Cheerios and Honey Nut Cheerios for Containing Wheat

cheerios recallGeneral Mills is voluntarily recalling several days of production of Cheerios and Honey Nut Cheerios cereal produced at its Lodi, California facility on certain dates in July of this year because of an undeclared allergen – wheat – with potential adverse health effects. Because this recall relates to an undeclared allergen, this is a Class I product recall.

Cheerios and Honey Nut Cheerios produced on these dates at the company’s Lodi, California facility are being recalled because an isolated incident resulted in wheat flour being inadvertently introduced into the gluten free oat flour system at its Lodi facility. As a result, the products may contain an undeclared allergen – wheat – in products labeled as gluten-free.

I Had a Dad bod. Then I Went Gluten Free

“I should look like Brad Pitt.”

Back before I went gluten free, I remember looking in the mirror and saying these exact words to myself.

I was working out 5 to 6 days a week, weight training and cardio, eating “right” but instead of looking good, I looked like a sausage…and it was getting worse.

Now, to be certain I didn’t go gluten free to lose weight, but because I had acid reflux, IBS, anxiety and a host of other problems.

When I asked, my doctor said I didn’t have celiac disease – without testing me.

I started a 100% strict gluten free diet anyway. As the inflammation decreased, I felt worlds better…and I lost weight. What I thought was fat had actually been retained fluid. 25 lbs of it. I haven’t had a dad bod in 12 years, and I don’t miss it a bit.

HUGE shout out to Kendall and the PUR Team for sending us samples of their new PUR Mints: Tangerine Tango, Spearmint, Polar Mint, Peppermint and the one I am currently enjoying – Mojito Lime Mint. The mints are gluten-free, aspartame-free and yummylicious! (They are also vegan, nut & soy free, diabetic friendly and non-gmo!)

PUR really promotes the fact that they do not use aspartame to sweeten their products. That’s a good thing. Aspartame is made from genetically modified e-coli, their feces in fact, and I was told it was produced in the same facility as Agent Orange. YUCK! Aspartame gives me migraines, so I stopped eating it even before I found out it was made from bacteria dung.

Instead, PUR uses xylitol, which is pretty smart considering xylitol creates a cooling effect in your mouth. I really like how the packets reseal, so you can save some for later…unless you eat them like candy like I do.  (Mmm. I just crunched into a Peppermint.)

Thanks again, Kendall. The mints are fantastic. I’ll definitely be making PUR my go to mints.
