My Food Philosophy – Finding My Inner Foodie

Yummy snacks can be simple and easy to make!

With all the working out I do it still surprises me how most days I honestly don’t get hungry. It’s something that confuses me, but something I’ve just accepted as a “normal” part of my life.

What helps me cope with this is focusing on how food is nourishing and will help me continue to be healthy. I continually look for ways to make my diet more “nutrient dense.” I’m happy to report that I have been increasing the amount of veggies I’m eating and have found more that I am enjoying! However the child in me is coming out because I have to hide them in my foods….whatever way works right?

Last night I made a delicious bowl of pasta with pesto, eggplant, and peppers. I added kale as well but I think it would of been better if I steamed the kale. Sorry for the absence of a picture, but I must say it was a beautiful {and colorful} creation!

Many would say I’m a conscious eater. I’m always making choices which will benefit me,  so if that means trying a food I don’t like a few times I will do it. Hence why I have been really pushing the veggies.

While I believe it’s OK to indulge within modification, I truly believe healthy foods can be fun and enjoyable to eat. There is no reason to enjoy boring foods. I have learned to have fun with flavors in the kitchen and through experimenting I have created meals and snacks that I look forward to enjoying again. Case in point my dinner last night!

I enjoy small meals throughout the day that will keep my body fueled. I have learned to listen to what my body wants, so if that means I’m craving a cookie {which rarely happens}, I will enjoy it rather than deprive myself.

All these points have helped me heal my relationship with food and has allowed me to find the inner foodie in me!

A few weeks ago I was craving popcorn. Not popcorn that comes from a bag, but popcorn that can be air-popped in the microwave. The only problem is I needed to find a natural popcorn without butter and salt. While I enjoyed this snack I wanted to kick it up a notch, so I added raisins and Apple Cinnamon Chex. Not only did it make this snack extra delicious but it allowed me to not miss the flavor the salt gives the popcorn and allowed me to get some extra iron and fiber into my diet! This is something I am always conscious about as many gluten-free products lack these important nutrients.

Here’s what you will need to make this wonderful snack:

1-2 cups of natural unsalted popcorn (I used Newman’s Own Organic)

1/4 c. of Apple Cinnamon Chex

1 box of Sun-Maid (90 calorie) raisins
