Recipe: Thai Peanut Chicken and Noodles

While there are a plethora of places to dine out gluten-free in the Columbus area, there is nothing like the convenience of being able to stay home and prepare your own meal. When I found that I could buy the San-J Thai peanut sauce in local stores, I began to use it in many dishes. One of my favorite dishes to date is this very easy Thai Peanut Chicken and Noodles.

Thai Peanut Chicken and Noodles

Ingredients:

3-4 ounces cooked chicken breast, cut up
2 oz rice noodles (I use Thai Kitchen, which can be found in many Columbus stores)
1/2 to 1 cup snow peas
2 TBSP San-J Spicy Thai Peanut Sauce

Method:

1. Cook noodles according to package instructions. This should take no longer than 15 minutes.

2. Set noodles aside. Cook snow peas in a dash of extra virgin olive oil or cooking spray for a few minutes on medium high to high heat.

3. Add in chicken, noodles and peanut sauce. Stir until hot.

4. Enjoy.

The above makes one serving and can easily be multiplied to accommodate more diners. Feel free to play around and add more vegetables or proteins – this basic recipe has so many different possibilities.
