There is something magical about combining the taste of a favorite holiday candy with an already perfect dessert. Try this combination of brownies with York Peppermint Patties for the holiday season.
To prepare the brownies, use your favorite brownie mix or try my very easy Cocoa Brownie Recipe. This works well with Bob’s Red Mill Brownie Mix.
Prepare the batter as directed on the package and add 1 teaspoon of peppermint extract to the mix.
Spoon half of the mixture into a greased 8×8 pan. Layer 16 miniature peppermint patties on the brownie mixture (4 in a row.)
Spoon the remaining mixture over the top of the patties. You may need to wet your rubber spatula if your batter is very thick. This will help smooth out the batter.
Bake according to directions on brownie package. If you recipe called for a 9×13 pan, you will need to increase the baking time by approximately 10-15 minutes to accomodate for the extra thickness of batter in the 8×8 pan.
Check to see that the batter is fully cooked by inserting a toothpick and seeing if it comes out clean. Make sure you aren’t just seeing melted candy on the toothpick, so try and insert it between patties.
