With football season in full swing, it’s time to whip out the finger foods. Luckily, recipe creation is a bit easier with new gluten-free ingredients popping up. McCormick Gluten-Free Recipe Mix recently released new spice packets that not only make everyday life easier when it comes to dinner prep, but party food, too!

I have come up with three fun recipes with a bit more class than what you usually see in the lineup.

Nacho Bites

No more boring bags of chips. Step your game up with these nacho bites.

Here’s a very easy make-ahead recipe for Gluten and Dairy Free Chocolate Pudding Mix. Keep a jar on hand for a fast kids-favorite dessert, after-school snack or lunchbox treat. Use your favorite dairy-free milk in the recipe. I used canned gluten-free coconut milk which makes a really rich-tasting pudding.

Prep Time: 7 minutes

Gluten Free Snack Attack! Dried Apricots at Sams Club

Hey there! Welcome to our Gluten Free Snack Attack! Today we are looking at Dried Mediterranean Apricots from Sams Club.

Gluten free chocolate chip zucchini mini muffinsZucchini is a veggie that you can easily add to just about anything, and that’s pretty much what I’ve been doing with it. Grated, it makes a wonderful “raw” pasta substitute, I love it lightly stir-fried with other veggies, it’s delicious sauteed and added to salads, omelets, or whatever else is cooking, and then of course there’s always zucchini bread. My grandmother used to make it every summer. She would bake it in loaves, and then sandwich softened cream cheese between thin slices. It tasted like cake, and I suppose it practically was the way she made it. YUM.

I started looking online for gluten free zucchini bread recipes, and I came across some zucchini mini muffins with chocolate chips over on Elana’s Pantry. I love that website, and I have her Gluten Free Almond Flour cookbook, which I use regularly. She now also has a Gluten-Free Cupcakes book, which is now on my wish list, if anyone is feeling generous.

Frito Lay Recalls Mislabeled Oven Baked Lay’s BBQ: They Are NOT Gluten Free

frito lay oven baked bbq recallThis just in from Frito Lay. The company accidentally printed Gluten Free certification logos on a certain number gluten-containing Oven Baked Lay’s BBQ crisps.

From the Frito Lay website:

IMPORTANT NOTE

On Monday, June 2, 2014 Frito-Lay initiated the voluntary recall of select 1 1/8 oz. packages of Oven Baked Lay’s BBQ. The product is being recalled because its package face is incorrectly labeled with the Frito-Lay gluten-free (GF) logo, while the ingredient panel and disclosures on the back of the packaging correctly indicate that the product contains wheat and barley. As a result, there could be confusion whether this product is gluten free. This was an isolated incident and we are putting parameters in place to prevent this from occurring again.

The affected product was sold to our foodservice and vending customers, as well as club retailers as one of the products included in the Baked! & Popped Mix 30 ct. Variety Pack Tray and Baked! Mix 30 ct. Variety Pack Cube. We have notified the FDA, as well as all of our relevant customers and partners, and we are working quickly to retrieve the product.
