Five Guys has earned quite a following up the East Coast since 1986, when the first one opened in Virgina. Most Celiacs (or anyone keeping away from gluten) wouldn’t think of eating at Five Guys Burgers and Fries, having been burned by fries cooked in non-dedicated oil and having to pick pieces of bun off their burgers. Five Guys is more than happy to make a hamburger or cheeseburger with no bun, and since they’re made on the spot, when you order, you can have it any way you want it. Five Guys’ toppings, which are all FREE, include mayo, ketchup, mustard, lettuce, tomatoes, lettuce, pickles, grilled onions, pickles, onions, relish, grilled mushrooms, jalapeno peppers, green peppers, hot sauce, A1 sauce and barbeque sauce. And because they’re not frying onion rings or anything else breaded, the French fries are free of gluten and full of flavor. Nature’s Path is a family run organic-based company founded in 1985 by Arran and Ratana Stephens in British Columbia, Canada. Since then, the Stephens family has expanded as well as the Nature Path’s family of foods.

Unilever Issues Allergy Alert on Wheat in a Limited Number of Tubs of Breyers® Ice Cream

Unilever United States, Inc., of Englewood Cliffs, NJ, in cooperation with the U.S. Food and Drug Administration (FDA), is voluntarily recalling a limited number of tubs of Breyers® ice cream because it was mispackaged and may contain undeclared wheat. People who have an allergy or severe sensitivity to wheat run the risk of allergic reaction if they consume this product.

On a limited number of tubs, the lid describes the product as “Breyers® All Natural Cookies & Cream” ice cream, and the tub portion of the package describes the product as “Breyers® All Natural Mint Chocolate Chip” ice cream. The product inside of the tub is “All Natural Cookies & Cream.” The ingredient statement on the tub does not declare wheat, which is an ingredient of the Cookies & Cream product. Read More »

What grains contain gluten?
Wheat, barley, rye, and any flours derived from these grains. There is controversy over oat’s status.

What are hidden sources of gluten?
Soy sauce (the second ingredient is wheat), barbecue sauce, marinades, teriyaki sauce, Asian sauces, or anything that contains soy sauce in the list of ingredients. Modified food starch, malted drinks, malt vinegar, most cold cereals, grain based veggie burgers, meatballs, breaded foods, durum and semolina pasta (another name for wheat flour), some seasoning blends, and many prepackaged foods.

What foods are safe to eat?
Most whole foods are safe, especially fruits, veggies, legumes, oils, nuts and seeds, and lean meats, and for some people, dairy. Safe grains include rice, corn, millet, tapioca, sorghum, teff, buckwheat (not related to wheat), potato starch, bean flours, nut flours, and coconut flour. Don’t let dried out gluten-free sugar cookie dough ruin your Halloween. Here is a easy and delicious recipe for rolled sugar cookies. You don’t even need to refrigerate the dough and the cookies freeze very well.

Ingredients:

1 cup rice flour
1/2 cup tapioca flour
1 cup potato starch
1 teaspoon baking powder
2 1/2 teaspoons xanthan gum
1 teaspoon salt
1 cup cane or beet sugar
1 cup shortening
1 egg
2 teaspoons GF vanilla extract
potato starch, for kneading

In the bowl of a mixer, cream together sugar and shortening. Add egg and vanilla and beat until combined. Add all dry ingredients and combine until the dough forms a ball. Read More »
