Easy Crushed Gluten Free Candy Cane Cake Recipe

gluten free candy cane cakesCandy canes can make any cake or cupcake turn into a magical winter treat. All you need to do is take some gluten-free candy canes (click here to see my favorite brand) and crush them up.  Sprinkle them on top of your favorite frosted treat and you will end up with a beautiful creation that looks like it is from a bakery.

Some of my favorite ways to use the candy canes:

1.  Make a vanilla cake from your favorite mix.  Add 1 teaspoon of peppermint extract to the batter.  Bake and allow to cool.  Frost with frosting (I like the Betty Crocker canned frostings).  Sprinkle with crushed candy canes. Read More »

Gluten-free, dairy-free grilled chicken recipeLast week, a joyous thing happened to me at the grocery store.  I saw a display of So Delicious Coconut Kefir, by Turtle Mountain.  I have been eating the So Delicious Coconut Milk Ice Creams and Yogurts but I was dreaming of an agave sweetened coconut milk kefir, and the folks at So Delicious must have read my mind.

Many of us on a gluten-free diet also avoid dairy.  The world of coconut milk products can make our dairy-free lives much more pleasurable.  I was so excited to see the kefir in the store that I bought both the strawberry and the dairy, both delicious!

Here is a simple recipe for grilled chicken.   The yogurt marinade can be made using regular Read More »

Gluten free pesto pizzaThis is the other pizza that my husband made for our dinner tonight.  This is my personal favorite.  There is something very comforting about the italian sausage and roasted veggies.  The other pizza he made was a Spinach, Pancetta and Goat Cheese Pizza.  We use Udi’s frozen GF pizza crust, but any GF crust will work.

Ingredients:

3 mild Italian sausage links,  casing removed
1 1/2 cups fire roasted peppers and onions (I use the frozen Trader Joe’s version)* Read More »

Better Batter Voluntary Recall

Better BatterFROM NAOMI of BETTER BATTER:

To My Customers:

Recently we were advised by our contract manufacturer that they had discovered that one of our suppliers was including a dairy ingredient in one of the components (sunflower oil) used in our pancake and cake mixes.

As you can imagine for a dairy intolerant family like mine, this was extremely disturbing.

We value your health and safety highly, and my commitment to never feed anyone something I cannot feed my own child is absolute.

Any amount of cross contamination with dairy – no matter how small – is unacceptable to us and, therefore I am authorizing a nationwide product recall of all mixes of yellow cake, chocolate cake and our biscuit and pancake mix. Read More »

1.     Find a restaurant that can accommodate gluten free meals. Many restaurants are very familiar with gluten free meals or have a gluten free menu.  If you are new to gluten free dining, stick to a restaurant where you don’t have to explain yourself.  There is a list of gluten free restaurants at www.glutenfreerestaurants.org

2.     Do your homework ahead of time. Call ahead and speak with the chef and ask if the restaurant can accommodate your needs.  Also, review Read More »
