Corn tortillas are a staple in my diet. But, finding tortillas that are gluten-free can be difficult. In fact, many corn tortillas, even gluten-free varieties, are made in facilities that also produce wheat tortillas.
That’s why I was happy to find this SUPER EASY corn tortilla recipe at Simplyrecipes.com!
The recipe is simple. Two cups of masa harina corn flour and up to two cups of water make 16 to 18 tortillas.
Add water to the corn flour according to the directions on the masa harina bag or until you have a pliable dough. Knead the dough with your fingers. Make a small ball about the size of a golf ball. Place the ball between two pieces of wax paper or plastic wrap. Flatten the ball using a tortilla press, flat bottom of a pan or rolling pin and remove the wax paper. Heat on a hot griddle or skillet for 30 seconds each side until the tortilla puffs a bit and browns in spots. Read the full recipe and article here at Simplyrecipes.com.
Remember, you are looking for masa harina flour. This is corn flour that has been treated with lime to release the niacin. It also absorbs water better. Ma Se Ca brand is certified gluten-free and sold at Walmart. A 4.4 lb bag is less than $3.00.
