Everyone loves Chocolate Chip Cookies! Now you can enjoy some that are not only Gluten-Free, but GRAIN-FREE as well. Almond Flour is high in protein, and a good source of magnesium and vitamin E. I hope you love these as much as I do!
I adapted this recipe from The Wannabe Chef Almond Flour Chocolate Chip Cookie Recipe:
Ingredients:
- 3 cups almond flour
- 1/2 cup butter, room temperature
- 1/2 cup sugar
- 2 eggs
- 1/2 teaspoon Celtic Sea Salt
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup chocolate chips
- 1/4 cup raisins and/or walnuts (optional)
Directions:
Preheat oven at 350 degrees.
Cream together butter and sugar. Mix in the the eggs. Add almond flour, salt, vanilla, and baking soda. Fold in chocolate chips, (and raisins or walnuts).
Scoop dough with a tablespoon and set on a foil-covered cookie sheet. Bake for 12-14 minutes.
*I enjoy these cookies fresh out of the oven, but they taste even better after sitting in the fridge over night! Makes about 30 cookies.
