National Foundation for Celiac Awareness Announces gluten-free credentialing to address widespread confusion in restaurant industry

New Credentialing Designed to Increase Food Safety Practices for those with Celiac Disease, Gluten Sensitivity and Gluten-Free Nutritional Preferences

Ambler, Pa. – April 25, 2012– National Foundation for Celiac Awareness (NFCA), the non-profit organization dedicated to raising awareness and improving the lives of those of celiac disease and non-celiac gluten sensitivity, announces a gluten-free credentialing program that will enable restaurants to manage the growing interest around gluten-free menu items. There are inconsistent standards, a lack of understanding of the medical elements of a gluten-free diet and too often, a lack of transparency about kitchen practices within the restaurant sector that has put the health of patients with celiac disease and gluten sensitivity at risk.

“Gluten-free families, especially those who are newly diagnosed, struggle with maintaining the diet even at home,” says Dr. Ritu Verma, Pediatric Gastroenterologist at the Children’s Hospital of Philadelphia and a member of NFCA’s Medical and Scientific Advisory Board. “While eating out is such an integrated part of our social fabric, the lack of consistent standards creates a stressful experience that Read More »

Porta Via Italian Kitchen: Best Gluten-Free Pizza??

Gluten Free Works Author Heather

I can’t believe that it has taken me this long to try Porta Via Italian Kitchen since hearing for the past year that they have amazing gluten-free pizza. But I’ve been leaning towards a high raw/vegan diet, so I’ve been less attracted to restaurants claiming to have the next best gf crust.  Yawn…

Having guests in town gave us the perfect opportunity to try Porta Via Italian Kitchen. I was astounded that they not only had gluten-free pizza, but gluten-free pasta as well.

Finding Gluten-Free Cuisine Is a Breeze in Las Vegas

Grilled Lamb Porterhouse Chops w/Preserved Serrano Chile Vinegar Sauce and Roasted Garlic

For the last two years my husband and I have enjoyed going to Las Vegas for a getaway. We like it there because there is gambling, shopping, shows and of course wonderful food. Those food options include an abundance of gluten-free cuisine.

While there in December 2011 we enjoyed two gourmet dinners with a plethora of gluten-free menu options.  One of the dinners was at Mesa Grill in Caesars Palace and the other was at NobHill Tavern in MGM Grand.  We also enjoyed a special breakfast complete with gluten-free Pamela’s Products pancakes ordered off of their Gluten Sensitive menu at The Cracked Egg.

Mesa Grill was up first and while the decor was a little on the cheesy side the food was excellent. When we made our reservations I was sure to stipulate that I would be eating Read More »

chick fil a grilled nuggetsChick-fil-A is expanding its gluten-free options by adding grilled chicken nuggets and Buddy Fruits to their Kid’s menu.

According to Chick-fil-A’s full-time dietitian Jodie Worrell, these new menu additions come as part of Chick-fil-A’s broader initiative to offer healthier menu options to customers. Initiative highlights include the addition of the Fruit Cup in 2004 and moving to a complete menu (including all condiments) with zero trans fats in 2008. Chick-fil-A also is actively working to reduce sodium across its menu, including a 40 percent sodium reduction in its Chargrilled Chicken filet, 25 percent less sodium in breads and removing 10 percent of sodium in dressings and sauces. Additionally, the chain has removed high fructose corn syrup from its chocolate milk, and some salad dressings and sauces.

According to the company, adding grilled chicken nuggets to their kids menu marks the first time a national fast food chain has offered Read More »

Become a Gluten-free Activist

gluten free activismOn a recent visit to a museum, my husband and I stopped at its cafeteria for a snack. The choices were cookies and cupcakes, pretzels and potato chips, and assorted drinks.  Clearly, the cafeteria didn’t cater to those of us who are gluten-sensitive, lactose-intolerant, and/or weight watchers.

Much against my will, I bought the only snack I could tolerate although it meant throwing my diet out the window: potato chips.  And much against my dislike of being labeled a complainer, I decided to speak up.  “Would you consider carrying gluten-free products?” I asked. “I can’t eat most of what Read More »

California Pizza Kitchen Pulls Gluten-free Pizza Crusts

gluten free california pizza kitchenEarlier this summer California Pizza Kitchen debuted gluten-free pizza on their menu. I was giddy. I loved CPK pre-gluten-free and couldn’t wait to go back and try their new pizza. Well,we did,and it was great, but our spirits were quickly dampened by the news that there could be major cross contamination issues going on in the kitchen.

I decided to go back and investigate to see what was going on and whether what I had heard about their procedures was indeed true. I was saddened by what I found out. While it had appeared that CPK went to great lengths to add the gluten-free pizza to their menu, they didn’t consider some of the most important issues. Cross contamination is real and can be very serious. Sure, some of those with Celiac Disease don’t react right away (or even at all),but some do and it isn’t pretty. This doesn’t even take into consideration those Read More »

Crunchy on the outside! Creamy on the inside!

Back in May Chick-fil-A added sweet potato waffle fries to their menu. The sweet potato fries are still in development, so they are just gathering feedback at this time, which also means they are only available in select locations.

Unfortunately, they were not available anywhere in Atlanta, but you can get them until August 31st at Chick-fil-A in Athens, GA.

Chick-fil-A is a great place to get fast food if you are on the gluten-free diet because Read More »
