Renowned chef, restaurateur and television personality, Chef Walter Staib, regularly includes gluten-free recipes on his PBS show, “A Taste of History.”

His City Tavern in Philadelphia is a faithful recreation of an original 18th century tavern where Chef Staib brings history to life with his wonderful dishes. He has made numerous appearances on local and national cooking shows, such as The Food Network’s Best Thing I Ever Ate and Iron Chef.

Chef Staib is the culinary ambassador to Deborah Heart & Lung Center, a hospital in New Jersey. anti ppm changes australia new zealandIssues of Concern with the undermining of Coeliac Disease care in Australia and New Zealand, the current Trade Practices Act stipulates that only products with no detectable levels of gluten are permitted to be labelled gluten free.

It has recently come to my attention that the Coeliac Society of Australia has not that long ago asked the ACCC to raise the allowable detection limit of gluten laws for a food to be labelled gluten free in Australia. They plan to change it from ‘no detectable gluten’ (currently <3ppm (parts per million) of gluten) to 20 ppm gluten. This will allow foods with small traces of gluten to be labelled ‘gluten free’ and meet world labelling definitions as up until this time Australia and New Zealand are of few countries with such strict gluten free labelling laws. Fox News Video: Boy with Autism Recovers After Gluten-free Casein-free Diet

Ethan Fox never slept more than two hours at a time.  He did not speak.  He ran continuously, day and night, until he would collapse from exhaustion.  After a short nap, he would awaken and run again. 

At one year of age, Ethan was diagnosed with autism.  At 20 months, after being written off by other physicians, he was placed on a gluten-free, dairy-free diet by Dr. Kenneth Bock, autism specialist and author of “What Your Family Needs To Know About Autism Spectrum Disorders.”

According to Ethan’s mother, Tracy Fox, results were seen within three days on a gluten-free, dairy-free diet. Ethan slept through the night, spoke his first words and has never had a problem since.  Now age 6, he is at the top of his class at school with a 97%  average…and virtually no one knows he was ever diagnosed with autism.

Old Spice Actor Reveals Gluten-free Diet Secret on Tonight Show with Jay Leno

Isaiah Mustafa, the actor build best known for his impressive build, good humor and over-the-top bravado in the Emmy-nominated Old Spice commercials, recently revealed the diet he follows to achieve his chiseled physique on the Tonight Show with Jay Leno.

According to Mustafa, celebrity trainer Tony Horton has him on a diet that contains no alcohol, caffeine, processed sugar, animal products or gluten. Horton is the producer of the wildly popular workout videos, P90X.
