I remember those extremely busy days for my husband and I back between 2010 and 2011. I mean, don’t get me wrong, we are always busy, but I mean at that time we were just so busy that sometimes we couldn’t fathom the thought of cooking.
Yes, those type days exist, even for gluten free vegans… Read More »
Two Eggnog recipes. The first, a Vegan Eggnog Coffee (or tea) Creamer that will transform a boring cup of coffee into a healthy eggnog latte. The second, a Light, Dairy-free Eggnog recipe made with dairy-free milk, ground spices and a touch of coconut sugar.
If you really knew me you’d know…
I brew a pot of tea every morning before I do anything else.

I’ve been going through an (unplanned) dessert recipe detox since the launch of my dessert cookbook earlier this year.
It’s not that I’ve been avoiding desserts, I just haven’t been interested in making them as much. But, realizing that the last sweet treat I shared with you was this Cherry Chunk Protein Ice Cream on June 18, I knew that something had to be done. Read More »
I have to say that my husband is one brilliant chef. I love him.
He always does the complicated yummy dishes, but sometimes it is simple and delightful.
These quesadillas were just that – simple and delightful.
These savory quesadillas were so good and the Daiya cheese made them perfect!
Since summer weather hit, most of my evening meals consist of spiralized veggies topped with some kind of yummy sauce. Thankfully, I’m not left to my creativity alone. I’ve had lots of help from our Raw Foods Thursdays participants.
Here are a few posts that you’ll want to check out:
- Johnna of In Johnna’s Kitchen did a lovely Spiralizer Round Up highlighting some fabulous raw noodle recipes.
- Katja of The Savory Lotus showed us just how endless the options are with vegetable noodles if you have a spiralizer.
Do you have a spiralizer yet? If not, let me highly recommend that you get one. I guarantee that it won’t become just one more kitchen gadget that you need to find room to store once the newness wears off. I use mine almost on a daily basis. Not only does it give you creative ways to use veggies but it increases your vegetable consumption, because squiggly veggies are just so much more fun to eat than veggie sticks!
I’ve been wanting to share this raw pasta dish for a while. It’s super easy to make and even more fun to eat! I hope you enjoy it! Read More »
Everyone has different reasons for making food (like Nutella) at home which they can buy off of the shelf; it might be economic or for health reasons. Since the first time I tried Nutella, I never had the desire to make it. But, when the day came that my darling dairy-free daughter could no longer partake because of the milk in it, I considered it.
I had seen a recipe for the hazelnut spread in my high-powered blender but assumed it was hard. I decided one day to take a look and was very happy to find that 1. it was not that hard (1 hour start to finish with time in between when you don’t have to do anything), 2. I had most of the ingredients in my cabinet with the exception of the hazelnuts (aka filberts), and 3. the recipe did not have any dairy in it. Ok, time to shift the paradigm again. Read More »
