Gluten Free Baking FAQs

gluten_free_Pumpkin_Cornbread

Hello to everyone! I’d like to take this opportunity to share with you what I’ve learned about baking gluten-free quick breads, such as Pumpkin Cornbread Squares, after 10 challenging months of adapting wheat flour recipes and experimenting with gluten-free flours, starches, and gums.  Here are some of the questions I asked myself and the answers that I found.

Q: Why would I bake gluten-free when I can now buy a variety of gluten-free products at a grocery store?

A: You may enjoy baking and want to continue.  Or you may want to save money and not buy packaged foods.  Perhaps, you’re not happy with the quality or taste of what’s available.

Or perhaps you’re like me.  I’m not only gluten-sensitive (recently diagnosed), but also lactose-intolerant and on a forever diet to keep Type 2 diabetes at bay. The result is that Read More »

Karo Corn Syrup Is Gluten Free and Allergen-friendly

Karo Corn Syrup Photo: www.karosyrup.com

Karo corn syrup is gluten-free.  There was some confusion about Karo since it contains caramel coloring.  A few of my readers were concerned about the coloring and here is what the manufacturer of Karo Syrup has to say.

“All Karo Syrup products are free of gluten, soy, milk, egg, peanut and tree nuts. The syrup production facility does not contain ingredients with these allergens, so cross contamination is not an issue. While some caramel colorings Read More »

A Beginner’s Guide to Gluten-free Baking: Easy Chocolate Chunk Cookies

Chocolate_Chunk_Cookies_lizschauThese chocolate chunk cookies are so simple to make and decidedly less involved than many gluten-free baking recipes. They bake up thin, crispy, and perfectly chewy. These cookies contain no flour or starches, which means they are lower in carbohydrates and, since they are made with cashew butter, are loaded with protein. And, should you choose to use dark chocolate, they’re also dairy-free. As always, be vigilant and check labels — especially when purchasing chocolate, as some contain wheat and gluten.

Gluten Free Chocolate Chip Zucchini Mini-Muffin Recipe

Gluten free chocolate chip zucchini mini muffinsZucchini is a veggie that you can easily add to just about anything, and that’s pretty much what I’ve been doing with it. Grated, it makes a wonderful “raw” pasta substitute, I love it lightly stir-fried with other veggies, it’s delicious sauteed and added to salads, omelets, or whatever else is cooking, and then of course there’s always zucchini bread. My grandmother used to make it every summer. She would bake it in loaves, and then sandwich softened cream cheese between thin slices. It tasted like cake, and I suppose it practically was the way she made it. YUM.

I started looking online for gluten free zucchini bread recipes, and I came across some zucchini mini muffins with chocolate chips over on Elana’s Pantry. I love that website, and I have her Gluten Free Almond Flour cookbook, which I use regularly. She now also has a Gluten-Free Cupcakes book, which is now on my wish list, if anyone is feeling generous.

But I digress. Here is the original Gluten Free Zucchini Chocolate Chip Mini Muffins recipe, and the only things I changed were my typical substitutions using Read More »

Erawan Rice Flour: Cheap and the Best

13307462_10154045942716815_3701873345349535161_n[1]Hey Friends! Here’s a quick money saving tip when it comes to buying rice flour and tapioca flour.

Check out your local Asian grocery store. We use Erawan. $.99/lb.

Erawan comes from Thailand. Don’t let the inexpensive price fool you. This is an excellent choice. The flour is superfine, not gritty like many gluten free flours. It is also truly flavorless.

We Erawan rice flour for pancakes, cakes, cookies, gravies – pretty much everything calling for rice flour.

Coeliac Australia, the Australian national celiac disease organization recommend Erawan. Their limit is 3-5 parts per million, so you know Erawan is safe.

Jules Gluten-Free: Sugar Cut-Out Cookies Recipe

You don’t have to build your cookies in a tree shape – but, boy it looks cute and festive!

Let’s be honest, If there was no Jules Gluten Free Flour there would be no family recipes recreated, no homemade cookies or cakes, and no way I could enjoy something special from time to time. I may be a exaggerating a bit here, but Jules’ flour is a product I {and my mom} are so thankful for. It was the product that gave me the courage to get back to baking after becoming discouraged, and has now allowed me to take risks in the kitchen.

Like many of my virtual friends I have never met Jules, but she is one of the “gluten-free celebrities” I want to meet one day. Not only am I thankful for her flour, but I am also so thankful for all the support she has given me over the last two years of blogging, often Read More »

Gluten-Free Pecan Pie Recipe

This gluten free recipe for pecan pie is incredibly sweet and delicious. Don’t be intimidated about making homemade pie crust. A food processor makes the task fast and easy- just keep your butter or shortening chilled and use ice water.

The rich pecan filling is mixed in a blender, making this a fast and easy favorite.

Tip – An 8 or 9-inch tart pan with a removable bottom makes a nice-looking crimped crust and makes cutting pies easy too. Read More »
