Gluten-free Super Bowl Recipe Round Up

Since the Super Bowl is this weekend, it seems fitting to round up all of the gluten-free recipes this Examiner can find.  We used to have fun hosting Super Bowl parties, but have since taken to just a quiet gathering.  When we hosted, some of my favorite dishes to prepare were: deviled eggs, seven layer dip, veggie tray, homemade dips (hot and cold), chili, wings from Allergy Free Foods, chicken nuggets from Applegate Farms, and brownies. Keep the menu simple and limit it to things you are comfortable preparing. No need to get stressed out on such a fun day of sports, commercials and of course gluten-free food.

“This book was written to help you move as simply and easily as possible from a gluten-full to a gluten-free diet. It is chock full of all the basic information you need to get started on the diet and would make a nice companion book to “The Gluten-Free Nutrition Guide.” It is written from a refreshingly unique (and often times funny) perspective as Eve (my co-author) went gluten-free while writing this book.” ~Tricia Thompson, MS, RD

Stand Up for Your “Gluten-free” Self!

Interesting experience over this past weekend.  I went to a restaurant that offers gluten free pizza and buns and inquired with the bartender if they had gluten free beer.

He proceeded to inform me that there is no such thing as gf beer because gf beer isn’t REAL beer and was a bit jerky about the whole thing.  He informed me that he brews his own beer, so he knows what real beer is.

I was quite offended at this response, as I was ordering gluten free beer out of necessity, not out of Read More »

Gluten Free Soapbox: Recovering From Flu With No Groceries Blues

Don't let this happen to you this flu season!!

Last week, the flu stole my will to live. I spent the entire week in a fog and barely ate anything but gluten free crackers and orange juice.  Oh, how I look back now and long for that simplicity!  I didn’t know then how easy I had it, and I didn’t know until now the consequences of the fact that no grocery shopping has been done.

Yes, I am still out of the things I was out of when I took to my bed last week.  Now I’m out of gluten free crackers and orange juice too!  I am continually amazed that the gluten free grocery fairies have not graced me with their presence.

At some point, my body decided it would be funny to heal just enough to be starving, but not Read More »

Gluten Free Soapbox: Say NO to “Meanies” in Forums

So many boxes, so little time… [taliesin/Morguefile

For this week’s gluten free soapbox we go back to the forums. Those online “support groups” that are supposed to be a place of sharing, healing and camaraderie. People log on to the gluten free forums to talk about their troubles and make friends who are struggling with the same issues they are. That is why I am so disturbed today.

Something I’ve noticed happening every so often (not constantly, but too much) is the sarcasm and derision thrown at Read More »

UConn’s Gluten-Free Food Program a National Model

Freedom from gluten is becoming easier than ever, especially if you happen to be eating at the University of Connecticut.

Are you gluten-intolerant?

If you are not, odds are you know someone who is.

And if you are – as are an estimated 1 in 100 people who have celiac disease – you know how hard it is to eat gluten-free.

But it is getting easier – especially if you are dining at the University of Connecticut in Storrs, where the gluten-free menu is state of the art.

I sampled some of UConn’s gluten-free food the other day with Dennis Pierce, UConn’s director of dining services, and Robert Landolphi, manager of Read More »

Gluten Free Soapbox: We Are Not Crazy!

This week’s gluten free soapbox comes from the personal archives. I’m absolutely certain that I’m not the only one who has encountered this, but it doesn’t seem to get talked about much…

Often times, it seems that people who are on strict gluten free diets get viewed as high maintenance, or picky. The constant need to check and double check ingredients tends to bother some people. The reports of contamination and reactions go unbelieved, and people give that knowing look when “gluten free” is mentioned.

I even had a doctor say that the worst that could happen with Celiac Disease is diarrhea, so not to Read More »

Staying Focused on Thanks!

As we approach Thanksgiving, I encourage you to spend a little time each day reflecting on what you are thankful for.

It’s easy to get caught up in our life challenges and to start focusing on unfairness and negativity.  We often discount the positive and over analyze and give importance to the negative.  Even when struggling with life’s challenges, if we can Read More »
