First I would like to apologize for being MIA the last month or so. A lot has been going on with the move, no working stove, and no internet for a while…but all is fixed. I am working on getting settled (still), and trying to organize life before school begins. Now on to the good stuff…

37 Cooks is at it again with another challenge. This challenge is with a company that I happen to love very much, Tropical Traditions. I love their coconut flour and oil very much and use it often, but sadly not often enough. I am working on trying to incorporate more of these great products into my CCGF recipes. Tropical Traditions products are all organic and Non-GMO! shrimp-0051I would grill all year-long if I could. This year we had so much crazy snow drifts that it was a bit impossible to do. I love my grill dearly…great flavors, you can grill pretty much anything, its outside with the sun and the fresh air, easy clean up, and less fats are used! We grill steaks, chicken, burgers, hot dogs, hot sausages, shrimp, fish, pizza, and veggies…tons of veggies! Last year I bought one of those little grill baskets for I think $3.00 and it works like a charm, especially for mushrooms.

For me breakfast is the hardest meal of the day. For starters, I get up at 4:00 am and I just can’t eat that early, so I normally take something with me and eat it on my way to campus. My breakfasts usually consist of a Greek yogurt or a scone that I have baked.  This is also the only meal that I get jealous of people without celiac disease, because they could eat just about anything they wanted for breakfast. We with celiac do not have the convenience of stopping at Starbucks (which we have two on campus) to grab something quick to eat.

Over the last three and a half years I have had the opportunities to do many reviews of great products. I truly enjoy doing reviews of cookbooks, and gluten-free products, and I’m looking forward to do more in the future along with any culinary based items (kitchen appliances, tools, etc.).

I love kitchen gadgets. Here are a few of my “must-haves”  items: Chef Knife, Stand Mixer, Mixing Bowls (different sizes), Prep Bowls, Boning Knife, Steamer (pan/bamboo basket), Zester, Grater, Silicone Whisk, a good set of Non-Stick Pans, Cast Iron Skillet, and a Crock-Pot. There are plenty more items, however this is a great starting point.

Two of my favorite companies for kitchen products are EdgeWare and Le Creuset. I mean, don’t well all hope to own their products?? I was sent one of each of the following products to test out and review and I have to say, I am honestly in love with both of them. Sugar Free & Gluten Free Chocolate Chip Cookies Recipe

These are mostly sugar-free because I used chocolate chips instead of a sugar-free alternative like carob chips. Substitute carob chips for the chocolate chips and you have yourself some delicious sugar-free cookies.

The cookies are made with Isomalt, which is a sugar substitute that is suitable for those who suffer from diabetes. Isomalt also has only half the calories of sugar, however it is suggested that adults should not consume more than 50g per day and 25g for children. I first learned of Isomalt while I was in my Baking and Pastry course at school. I am in no way an expert of working with sugar alternatives but I wanted to give this a try seeing as Bryan’s dad has diabetes and both of my grandfathers (who have now passed away) had diabetes.  We are really trying to cut back out sugar intake this year and when I was sent samples of this I wanted to give it Read More »

gluten free blackened shrimp nachosLast weekend my Aunts Sue and Patti invited us over for dinner and some delicious gluten-free, crust-free cheesecake for my birthday. While we were there hanging out in the kitchen chatting with my Aunt Bryan and I started flipping through the Kraft Foods magazine “Food&Family” and Bryan kept picking out recipes he wanted me to make.  We do this often.  I’ll get a new magazine or cookbook and I’ll flip through it then give it to him to pick out what he wants to try first. So in this one, he picked out a few but the one he wanted first (aka, the next day!!) was the Cheddar-Shrimp Nachos.

Last year (almost to the day) I posted a recipe for  Fruity Pebble Treats after I had gotten “glutened” by eating a rice krispy treat – silly me for missing the MALT flavor ingredient (see my post about the new gluten-free Rice Krispies here).  So instead of making the same mistake twice, I followed the advice of one of my readers, Kristi, and made the crispy treats using Fruity Pebbles (I’ve also made them with the cocoa pebbles and both are awesome!).  Before making these I called Post to double-check that these two cereals were in fact gluten-free and was assured that they were gluten-free.  You can check out the original post here.
