We are all feeling the effects of rising food costs.
A recently published study appearing in the Journal of Human Nutrition and Dietetics, “Limited availability and higher cost of gluten-free foods,” found that gluten-free versions of wheat-based foods cost, on average from 76% to a whopping 518% more. Ouch!
The good news is that there are lots of ways you can cut your gluten-free grocery bill, while staying healthy on a gluten-free diet. Two of my favorite ways to lower my gluten-free food costs include (more…)

Deep fried gluten-free onion rings are a real treat! I don’t deep fry often but when I do, I use this recipe and either Vidalia or Walla Walla onions. They’re crunchy delicious.
Prep Time: 6 minutes
Cook Time: 20 minutes
Total Time: 26 minutes
Yield: 4 to 6 servings
Ingredients:
- 2 sweet yellow onions, preferably Vidalia in season or Walla Walla

The store was launched during National Celiac Disease Awareness Month and its goal is to make it easier to find gluten-free foods by putting them under one department.

Since I am always on the lookout for a sweet snack that is free of gluten, dairy, and soy, I was happy to receive samples of KURDelights. So many gluten-free bars/snacks contain soy protein and/or dairy, or they are very high in sugar and carbs and low in protein and fiber, which is not the case with KURDelights.
These bite-sized snacks contain just enough sweetness to satisfy my sweet tooth and they come in three flavors: Brownie, Coconut Cream, and Dark Chocolate Mint. My favorite flavor is the coconut cream followed by brownie and then dark chocolate mint. These healthy snacks are: (more…)

Summer is coming and fresh vegetables — in the stores, at the farmer’s markets and in your garden — will be plentiful. It’s time for summer salads.
Try this delicious salad as a side dish or even as a main. It’s light and satisfying.
Use the ingredients list as a guide. If you don’t have peppers, use what is on hand. If you don’t like cilantro, it’s fine not to use it at all; many people don’t like it. Use any lettuce, even finely sliced cabbage. See the tip below for how to make your red onion a little mellower. Fruit Cake seems to be one of those things that you either love, or you hate. Personally I also find them really hard to bake and not have them dry out, so this year was a double challenge to make the perfect gluten free fruit cake without it drying out. Like most recipes it’s a personal taste on what you’d like to add, obviously if you have a nut allergy you can exclude those. If you like your cake frosted with frosting you can also do that too.

This is a great way to start the day on a sweeter note, without the sugars found in more traditional sweet morning fare—something that works great for those following a gluten-free–and even grain-free–lifestyle. It is packed with fiber, Vitamin A, protein and healthy fat. Use sweet potatoes or winter squash that has been pre-cooked to make preparation fast and easy–there should be plenty on hand, either before or after a Thanksgiving feast! This is a dish that pleases young and old alike.
Serves 2
Ingredients:
• 1 cup cooked Sweet Potatoes or Winter Squash, skins removed
• 2-3 raw Eggs
• ½ cup unsweetened Almond Milk or Coconut Milk
• ½ tsp. ground Nutmeg
• ½ tsp. ground Cinnamon

They make great stuffing!
I can’t believe that it is almost Thanksgiving! Where has this year gone to, or this month further more lol The fall is flying by, and I must say I’m loving it since I love the holidays. This is the first year that I will not be participating in the traditional Thanksgiving meal with family, as my Mother and I will be venturing to NYC for the week!
I did though, however, prepare for this and the Christmas holiday meals by recreating my absolute favorite side dish. I thought my holidays would be ruined when I went gluten free and thought I’d never eat my Mother’s stuffing again! I’m pretty crafty, so I of course I found a way to avoid a major meltdown at the dinner table.
I knew a meltdown was certain to happen if I had to watch others eat stuffing in front of me, dun dun dun….so I found a gluten free stuffing mix and recreated Mom’s recipe, and it tastes exactly the same! (more…)

Crunchy on the outside! Creamy on the inside!
Back in May Chick-fil-A added sweet potato waffle fries to their menu. The sweet potato fries are still in development, so they are just gathering feedback at this time, which also means they are only available in select locations.
Unfortunately, they were not available anywhere in Atlanta, but you can get them until August 31st at Chick-fil-A in Athens, GA.
