This side dish is sort of the unique Irish twist on mashed potatoes. Though most versions of this recipe seem to call for cream, we toned it down by adding yogurt instead, and cutting down the amount of butter used. Light and creamy, with chopped green onions, and our further addition of fresh cilantro, our version of champ is a great twist on a simple dish. (more…)

Gluten-free shamrock sugar cookies are buttery good, easy to make and a charmin’ St. Patrick’s Day cookie.

You will need a small (about 3/4-inch diameter) shamrock cookie cutter to use as a stencil on your cookies. If you can’t find this type of cookie cutter you can make your own stencil by tracing and cutting a shamrock shape on a plastic kitchen mat (available at most stores in housewares.)
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes
For this recipe, you will need:
- 2 large eggs
- 2/3 cup granulated sugar

Our Guide to British and Irish Cooking, Elaine Lemm has great names for this easy potato cake recipe. Elaine says that in Scotland the recipe is called “Tattie Scones or Potato Scones” and in Ireland “Fadge or Potato Bread.” Whatever you call them, these little potato cakes are easy to make, economical and a good use for leftover mashed potatoes. Fadge can be baked or pan-fried. The fadge pictured here was baked.

Today is St. Patrick’s Day and for me that means wear something green or you are going to be pinched.
For others that means preparing traditional Irish dishes to celebrate the holiday. Every year when this holiday arrives this Examiner is always thankful that corned beef and cabbage and potatoes and carrots are all naturally gluten free and easy to prepare.
