Vegan Creamy Ranch Quinoa Salad Recipe

Did you have a good weekend?

Kevin and I had initially planned to go to Calaway Park, but it ended up raining all weekend so we decided to stay home and organize the house! Sounds much better than going to a theme park, right? *rolls eyes*

It’s amazing how much stuff a person can accumulate over the years, isn’t it? I was surprised to learn that we have 11 boxes of Christmas things – lights, decorations, stockings, etc. That’s more than we have boxes of books, or clothes! There’s something wrong with this picture, no?

Come Sunday afternoon, we had made two trips to the goodwill center, organized the basement, our offices and the garage, and were absolutely drop-dead starving! Kevin kept himself busy sorting through a box of old photos while I prepared a big salad for the two of us. We met in the living room just off the kitchen, sat on the floor with the dogs, and Read More »

Vegan and Gluten Free “Chocolate” Glazed Donuts

Let me introduce you to my favorite – and the most popular of my donuts…The Vegan and Gluten Free Chocolatey Glazed Donuts.  No compromise in flavor here!  These are just like the classic favorite, except with a subtle coconut flavor in the amazingly simple and sweet chocolatey glaze, that does not require corn syrup (so its corn free!!).  These donuts are moist, and sincerely decadent.  You will for sure want to eat a second and third – easily.  Just picture yourself in your favorite coffee shop (Starbucks maybe???), served up one of these warm, chocolatey beauties.  I know, I know…

One Dish, Three Meals – Mexican Style!

I have never viewed being on a gluten and dairy-free diet as restrictive. Of course there are many foods I can’t have, but there are many more foods I can enjoy. However, more so than I did before I went gluten-free I get in phases where I feel like I’m eating the same foods. This is especially true since I have had to restrict my diet even more due to acid reflux.

When my parents came up last time my mom brought me two 1lb containers of ground turkey. I had made a meatloaf with one and had been enjoying the frozen turkey burgers my mom had made, but with my last Read More »

Four Delicious Gluten-Free Cookie Recipes

Craving something yummy? Try these four gluten-free cookie recipes this weekend!

Gluten-free and Vegan Gingersnap Cookies

These gingersnaps are full of flavor.

They’re chewy, moist, and have a crackly top, as any gingersnap should.

If you don’t like your gingersnaps chewy, no worries, just bake them a bit longer and they’ll crisp up perfectly!

Dreamy Gluten Free Chocolate Chip Cookie Balls Recipe

Gosh, those cookies were good. Rrr… I mean it was a great bonding experience.

It seemed like Auntie Lesley always had a fresh batch in the jar just waiting for my sister and me. They were doughy, and melty, and buttery…

When my Mom would ask my sister and me why we liked Auntie Lesley’s cookies over her own, we’d always say “but Mom, they’re not cookies. They’re pie crust balls with chocolate chips. They cannot be compared!”

Gluten Free Recipe: Yabba Dabba Do Cookies!

I followed the advice of one of my readers, Kristi, and made the crispy treats using Fruity Pebbles

(I’ve also made them with the cocoa pebbles and both are awesome!).

Before making these I called Post to double-check that these two cereals were in fact gluten-free and was assured that they were gluten-free.

Try them today. You’ll love them!

Gluten Free Shortbread Cookies

These light (and no, not in the fat content sense), buttery, sweet little wafers will melt in your mouth.

Plus, shortbread is perfect for making gluten free because it’s supposed to be a little crumbly.

I don’t even bother making wheat shortbread cookies anymore because everyone likes these just as much, if not more.

Gluten Free But May Contain Wheat

You’re walking through the supermarket when you see a new product marked gluten-free.

You read the ingredients like you always do and notice “May Contain Wheat” at the bottom.

Do you buy it?

Products that contain 20 PPM (parts per million) or less are considered gluten-free in the United States and many other countries.

Would you consider this a safe product? Why or why not?

Gluten-Free Quinoa & Pumpkin Seed Granola Recipe

I have dubbed this my no-oat granola. I missed that detail when I first started adapting this recipe and was sure Better Homes and Gardens had forgotten to list the oats in the ingredient list. Alas, it was intentional and I’m loving it! This granola with a little homemade almond milk is my new go-to breakfast, snack, and occasional dinner.
