Guess what I was doing the other day?  Browsing Twitter!  Imagine that?   I was instantly drawn to these Easy Cinnamon Muffins that Jo-Lynne shared.  I knew that Jon would love them, so I pre-heated my oven and got down to work.

Gluten-Free Pumpkin Doughnut “Hole” Recipe

Gluten-free pumpkin doughnut “holes” are easy to make using a mini muffin pan. This recipe is baked, not fried but these delicious pumpkin-rich pastries are anything but fat-free. The warm mini muffins are dipped in melted butter and rolled in spiced sugar.

This recipe was adapted to gluten-free diets from a recipe for “Pumpkin Doughnut Muffins” by DeeDee Stovel which appears in her terrific cookbook, Pumpkin – A Super Food for All 12 Months of the Year.

Prep Time: 30 minutes

Cook Time: 15 minutes

Gluten-free Dairy-free Belgium Waffles Recipe

I don’t know about you but when I smell Belgium waffles at those kiosks, I really wish I could eat gluten. Last year I vowed to find a replacement and I must say, I nailed it. I have made it two ways; with the caramelized sugar and without. Homemade frosting is a delicious and decadent treat that is easy to make.  Great frosting can enhance a store-bought goodie or finish the finest of your homemade desserts.

Both the lemon and cinnamon versions of this frosting are delicious on carrot or spice cake.  For an easy dessert, make a batch of Namaste Spice Cake and frost with homemade frosting.  The cake mix can be made as a spice cake or a carrot cake and is delicious as cupcakes.  Another easy-to-make and delicious cake mix is from Pamela’s Products.  Pamela’s also has a terrific frosting mix, if you don’t want to make your frosting from scratch.

Gluten Free Cranberry and Hazlenut Biscotti Recipe

gluten free cranberry hazlenut biscottiThese hazlenut biscotti have a warm, complex flavour with a lighter texture than my usual biscotti.  They have a hint of cinnamon but if you want a spicier flavour just add more spice, perhaps with mixed spice or ginger as well as the cinnamon.  If you like an iced biscotti, making a glace icing with icing sugar and ginger wine would work well.
