There are a lot of recipes out there that call for cream of chicken soup. This is not a happy thing for people who cannot have this creamy delight due to Celiac Disease or gluten intolerance. Here is a great recipe for Gluten Free Cream of Chicken Soup. Hopefully this will take a little of the stress out of weeding through the cans and cannots in your recipe box.

  • 1 cup milk
  • 1 Tbs. butter or margarine
  • 2 Tbs. cornstarch

Easy Allergen-free Gluten-free Pumpkin Pie Recipe

This recipe is taken from The Heart Of Cooking — a wonderful resource for all things allergen-free.  The blog is loaded with recipes that are “legal” on the Specific Carbohydrate Diet or G.A.P.S. Diet, are gluten-free, casein-free (or, dairy-free), soy-free, and nut-free.

Coconut shreds are used in place of white flour and a traditional crust.  It’s a great gluten-free/grain-free alternative to rice flours or other starches (tapioca, potato, etc.) that are often called for in gluten-free baking. (more…)

Allergies Lead Churches to New Practices

The Rev. Bill Miller-Zurell was recently presiding at Communion, moving from congregant to congregant, offering the body, offering the blood, until he got to a little boy who, seeing the piece of bread, stopped the pastor short.

“He asked me if there were any nuts in it,” said Miller-Zurell, who leads New Hope Lutheran Church in Columbia. “His mom, who was standing behind him, made him. And he only took it after I assured him that there were no nuts.” (more…)

It’s been awhile since there has been a gluten-free item of the week but the Trader Joe’s Pumpkin Butter is just too good to go unnoticed.
 
October and November are known for many delicious pumpkin treats: pumpkin bread, pumpkin pie, and pumpkin cookies which all normally contain wheat gluten.  But thanks to Trader Joe’s, you can get into the festive spirit by spreading a little pumpkin butter on your favorite gluten-free items – from gluten-free (more…)
