INGREDIENTS:

  • one red bell pepper
  • one green bell pepper
  • one small red onion
  • 1/2 cup sliced olives
  • one ear of white or yellow corn, boiled until tender
  • 8 oz of your favorite brown rice pasta
    (I suggest Trader Joe’s Brand)
  • 12 oz of your favorite marinara sauce
    (I love Prego!)

Old Spice Actor Reveals Gluten-free Diet Secret on Tonight Show with Jay Leno

Isaiah Mustafa, the actor build best known for his impressive build, good humor and over-the-top bravado in the Emmy-nominated Old Spice commercials, recently revealed the diet he follows to achieve his chiseled physique on the Tonight Show with Jay Leno.

According to Mustafa, celebrity trainer Tony Horton has him on a diet that contains no alcohol, caffeine, processed sugar, animal products or gluten. Horton is the producer of the wildly popular workout videos, P90X.

Upcoming American Dietetic Association Conference Offers Food-allergy Training

The ELL Foundation is offering a course for registered dietians on managing patients with food allergies and intolerance at the upcoming American Dietetic Association’s Food and Nutrition Conference & Expo in November.  ELL’s Food Allergy and Intolerance management Training Program designed this course because they recognizes the growing need for assistance in assessing nutritional intake, potential deficiencies and substitute dietary plans among individuals having dietary restrictions.  Celiac Disease/gluten intolerance is one of the main topics covered in the course.

Atlanta’s Upcoming Gluten-free Vendor Fair Accepting Raffle Donations

So excited to report that the upcoming Gluten Free Vendor Fair and Fundraiser in Norcross on September 25th is officially sold out at 70 vendors.  This is the fourth gluten-free vendor fair sponsored by the Atlanta Metro Celiacs and coordinated by this Examiner. 

Even though there is no more room for vendors to demo their products, the Atlanta Metro Celiacs are happy to accept donations for their raffle.  Raffle tickets are sold for $1 each and are a widely popular purchase at the fair.

Investigation of Gluten Sensitivity Requires Anti-Gliadin Antibody Testing

The news release below is timely because anti-gliadin antibody blood tests are losing ground while the reality of gluten sensitivity looms far larger than is now appreciated by many doctors!  These blood tests are absolutely necessary to investigate health problems caused by gluten itself, yet they are being dismissed by doctors who look only to diagnosing celiac disease.

Positive anti-gliadin antibody tests show undigested gluten peptides in the bloodstream.  This abnormal finding tells the story that gluten has passed through the tight barrier defenses of the small intestinal lining into the body where it can wreak havoc, with or without celiac disease.  Gluten is a food protein in wheat, barley, rye and oats.

National Celiac Disease Awareness Day in the United States: September 13

 

Today is National Celiac Disease Awareness Day in the United States. From the National Foundation for Celiac Awareness website:

September 13 has been dubbed “National Celiac Disease Awareness Day” in honor of the doctor who identified a link between celiac disease and diet. Dr. Samuel Gee, a leader in celiac disease research, was born on Sept. 13, 1839.

Senate resolution calling for the commemoration gained unanimous approval on Aug. 3, 2010. In marking the awareness day, the Senate “recognizes that all people of the United States should become more informed and aware of celiac disease,” the resolution stated.
