Gluten Free Quinoa, Lentil and Garbanzo Salad Recipe

Just because you are eating a gluten free diet, doesn’t mean you have to sacrafice on taste. Why not create a salad that is healthy, delicious and gluten free? The lemon and parsley give it a fresh and light flavor and the combination of quinoa, lentils and beans provide a wonderful balance of texture. Now, that will put a smile on your face!

Quinoa, Lentil, and Garbanzo Salad

Ingredients:

  • ½ cup French green lentils, aka lentils du puy
  • about 1 – 1 ½ cups quinoa
  • 1 can garbanzo beans, drained and rinsed

University of Chicago Celiac Disease Center Annual Free Screening October 9th

The University of Chicago Celiac Disease Center is holding its annual free blood screening for celiac disease on Saturday, Oct. 9 from 8:30 a.m. to noon.

Copper Malabsorption in Untreated Celiac Disease Common

In this study, researchers investigating the absorption of copper in untreated patients who had damage to their duodenum found anemia in 3 out of 10 of these patients that was due to copper deficiency.  They gave all the study subjects a solution of copper to drink that was equal to a daily dose then tested their blood level.
