This recipe is taken from The Heart Of Cooking — a wonderful resource for all things allergen-free.  The blog is loaded with recipes that are “legal” on the Specific Carbohydrate Diet or G.A.P.S. Diet, are gluten-free, casein-free (or, dairy-free), soy-free, and nut-free.

Coconut shreds are used in place of white flour and a traditional crust.  It’s a great gluten-free/grain-free alternative to rice flours or other starches (tapioca, potato, etc.) that are often called for in gluten-free baking.

Allergies Lead Churches to New Practices

By Jill Rosen, Sun reporter

The Rev. Bill Miller-Zurell was recently presiding at Communion, moving from congregant to congregant, offering the body, offering the blood, until he got to a little boy who, seeing the piece of bread, stopped the pastor short.

“He asked me if there were any nuts in it,” said Miller-Zurell, who leads New Hope Lutheran Church in Columbia. “His mom, who was standing behind him, made him. And he only took it after I assured him that there were no nuts.”

In the fall, it’s easy to get fresh, local carrots in the San Franciso area from the grocery store and farmer’s markets. There seems to be something very comforting about muffins and breads flavored with cinnamon. But on a gluten free diet, one is often denied these flavors.

Correcting Potassium Deficiency in Celiac Disease with a Gluten Free Diet

Potassium is a mineral that is easily absorbed by the digestive tract. This micronutrient is essential for life because of the vital functions it performs in our bodies. Potassium is an electrolyte that takes part in electrical conduction and chemical reactions in opposition to the electrolyte, sodium. In bodily fluids, potassium is the major cation (positively charged ion), while sodium is the major anion (negatively charged ion).

Gluten-free Halloween Candy Lists

Halloween is quickly approaching and it is important to take the time to determine which candies are gluten free.  We tend to give out gluten-free candies at our house as there are so many great ones from which to choose.  My favorite gluten-free candy has always been Reese peanut butter cups, so we always offer those to our trick-or-treaters.  We couldn’t have been happier to learn that Nature’s Path created a treat-sized version of their Lemur Peanut Choco Drizzle bars and we will be purchasing some to mix in with the more recognizable candies.
