Moist and luscious, gluten-free carrot cake with cream cheese frosting is a gluten-free favorite at my house. The cake freezes well and the recipe makes one round layer cake, one 13×9-inch sheet cake or 36 cupcakes. Three cups of grated carrots add healthy carotene, a nutrient that the body uses to make vitamin A. Not bad for a cake!
At one of my favorite grocery stores, they make a chile relleno casserole that is delicious. I found out it has flour so I’ve been researching how to make it gluten-free at home; it wasn’t too hard. Well I just didn’t feel like making a full-on casserole so I opted for a puffy omelet instead.

Green Chile and Cheese Omelet

I never would have thought that I could make absolutely the best cake donuts both gluten free and vegan before this. I mean, let’s be honest – there is not a lot of vegan and gluten free online. You search online and you find gluten free donuts – with eggs. You find vegan donuts – withWhether you make your own gluten-free flour mix or buy one like Auntie’s Flour Blend, it’s easy to make really tasty muffins. You just need a fool-proof recipe!
I’ve been making these muffins for about 5 years. When my daughter was first diagnosed with a gluten and dairy sensitivity, I put my best foot forward and figured out the perfect combination of ingredients to create a moist and flavorful end product. There are a few rules, though, that are important to follow. Here are my suggestions:
Wanna hear something funny? When I first started my blog, I intended it to be an even mix of meals, breads, soups, desserts, etc. that mirrored how we eat. When I re-did my recipe index, I realized that notion bit the dust a few years back, and surprise, surprise, it seems like my blog is brought to you by the letter C and the word chocolate. Not that I don’t love chocolate, but I’d kinda like to balance things a little more. Just cause.
Then again, as I look at my very un-photogenic, super-yumtastic stew, maybe part of my decision is because dessert photographs better?

Ingredients:
2 cups all-purpose flour ( I used Jules Gluten Free)
1/2 teaspoon baking powder
1/4 teaspoon salt (Omit if you use Earth Balance Butter Sticks)
1 stick unsalted butter, at room temperature (I used Earth Balance)
1/3 cup evaporated cane juice
1 large egg
1/4 cup honey
1 teaspoon vanilla extract (Make Sure GF)

Lauren is the queen of sweet and is known for her uniquely creative treats and crafts. She recently launched a holiday baking guide (entitled Sweet Gifts Holiday Baking and Crafting Guide– available nationwide) filled with innovative and delicious recipes for the holidays.
Lauryn was nice enough to share one of her creations with The Family Chef. In this recipe, she calls for a red velvet cupcake (you will find a gluten-free, no-dye recipe in my upcoming cookbook). You can always use a basic vanilla (gluten-free).
