Kids love this creamy delicious high protein “banilla” smoothie. There’s a lot of nutritional value in this 5-minute busy morning gluten and dairy free smoothie. Use a frozen banana for extra creamy texture.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 2 servings

Ingredients:

  • 2 cups unsweetened dairy free milk substitute – (Use your favorite. Mine is light coconut milk.)
  • 2 ounces dairy free protein powder (I used Healthy-N-Fit 100% Egg Protein Vanilla Ice Cream Flavor)
  • 1 peeled and sliced medium frozen banana
  • 1 teaspoon vanilla extract
  • Dash of nutmeg (optional)

It’s been a hot summer these past few days in NY. When the heat is beaming, one of my favorite kinds of meals to enjoy is fish on the grill because it doesn’t leave me feeling heavy.

To me, summer is all about enjoying fresh ingredients. Fruit and veggies are at their prime and I always look forward to the first long island corn on the cob. I think my family would honestly be happy eating watermelon every night for dinner; this being a summer tradition I also love.

While watching The Chew on ABC one day, Mario Batali’s sons gave me a fantastic idea. They had made “Pocket Burgers,” which is a hamburger with the toppings inside of the burger.

WHY HAVEN’T I EVER THOUGHT TO DO THIS BEFORE?

Believe it or not, my very favorite pesto is carrot top pesto. There’s some stiff competition from Kale Pesto and Garlic Scape Pesto and of course, regular basil pesto. Perhaps it’s such a treat because it’s quite a rarity.

Since summer weather hit, most of my evening meals consist of spiralized veggies topped with some kind of yummy sauce. Thankfully, I’m not left to my creativity alone. I’ve had lots of help from our Raw Foods Thursdays participants.

Do you have a spiralizer yet? If not, let me highly recommend that you get one. I guarantee that it won’t become just one more kitchen gadget that you need to find room to store once the newness wears off. I use mine almost on a daily basis. Not only does it give you creative ways to use veggies but it increases your vegetable consumption, because squiggly veggies are just so much more fun to eat than veggie sticks!

Everyone has different reasons for making food (like Nutella) at home which they can buy off of the shelf; it might be economic or for health reasons. Since the first time I tried Nutella, I never had the desire to make it. But, when the day came that my darling dairy-free daughter could no longer partake because of the milk in it, I considered it.

I had seen a recipe for the hazelnut spread in my high-powered blender but assumed it was hard. I decided one day to take a look and was very happy to find that 1. it was not that hard (1 hour start to finish with time in between when you don’t have to do anything), 2. I had most of the ingredients in my cabinet with the exception of the hazelnuts (aka filberts), and 3. the recipe did not have any dairy in it. Ok, time to shift the paradigm again.
