College_InnDecember 4, 2009 – PITTSBURGH – As a precautionary measure, due to mislabeling, College Inn is initiating a voluntary recall of College Inn® No MSG Chicken Broth sold in individual 14 ½ oz cans.

All other sizes and varieties of College Inn® Chicken Broth are correctly labeled and therefore are not affected by this voluntary recall.

Catholic Potatoes are these amazingly cheesy & creamy potatoes that my Grandmother has been serving for years. The recipe is super simple to prepare in advance & is sure to please any crowd.

Ingredients:

    5 lbs potatoes8 oz pkg. light cream cheese, softened

    8 oz container light sour cream

    1/4 cup butter, melted

    8 oz. shredded 2% cheddar cheese

    1/4 to 1/2 cup skim milk

We are very lucky to have Dr. Cynthia Rudert, MD practicing in Atlanta. She is the only nationally recognized celiac specialist in the Southeast.

Recently I was fortunate enough to interview the very busy Dr. Rudert about celiac and her thoughtful answers were so informative that the interview will be posted in several parts. Unlike many doctors I’ve encountered, Dr. Rudert is always learning as much as she can about celiac so can help her many patients with the condition, as well as those with severe gluten-intolerance. I boldfaced some of the most crucial comments in Dr. Rudert’s reply below.

Dr. Rudert, you have been treating people with celiac for many years now, but it seems that many doctors still think the condition is rare. Since we now know the condition affects almost 1 out of every 100 Americans, it is far from rare. What do you consider the main problem is, in getting the word out to the medical community about this greatly under diagnosed disease?

Celiac Disease is the most common autoimmune illness of humankind. If one were to take all the patients with Crohn’s Disease and all the patients with Ulcerative Colitis and add in all those with Cystic Fibrosis and then triple the numbers that would be equal to the number of individuals with Celiac Disease. For my Math friends: 3X (Crohn’s +Ulcerative Colitis +Cystic Fibrosis ) = Celiac Disease. Approximately 98% of those with Celiac are not diagnosed or misdiagnosed.

I love cooking with different wines, juices and making up different sauces. It can be quick and easy as long as you know the basic steps. Recently, I received a sampling of the POM Wonderful pomegranate juice and immediately thought it would pair well with pork.

Pork is a meat that can be made quickly and goes well with a variety of seasonings and sauces.

pork_pomI have always been a big fan of POM Wonderful juices so I was thrilled to see what I could come up with in the kitchen that would be gluten-free. POM Wonderful juice is a great source of potassium and iron. The juice also has a slight tart taste.

Is turkey gluten-free? Here is a List That Is

Turkey2_225x225With Thanksgiving coming up this week, it is important to know which turkeys are gluten-free and safe to eat. The issue with a turkey being gluten-free is usually in the gravy packet, if there is one. Solution? Make your own from scratch. Use the broth from the cooked turkey or canned, gluten-free chicken broth & thicken with cornstarch.

Butterball turkey gravy packets are now gluten-free

[Update November 19, 2018: All of the Butterball products are gluten free except for Butterball Stuffed Turkey (bread stuffing) and Butterball Frozen Meatballs.  For our products that are packaged with gravy packets, the gravy packets are gluten free as well. The gravy contains rice flour instead of wheat flour and the modified food starch is corn based. Source: Butterball.]

turkeyThere has been some confusion lately about whether or not Butterball turkey gravy packets are gluten-free. There are six types of Buttterball turkeys that come with a gravy packet. They are listed below and all currently come with a gluten-free gravy packet. The key to understanding if your gravy packet is gluten-free is to READ the label.

Any newly manufactured gravy packet will contain rice flour. According to Butterball (1-800-BUTTERBALL) there are still some older packets of gravy in the stores that contain wheat flour. Therefore, read your packet and make sure it does not contain wheat flour. If it contains wheat flour, you have an older packet and it is therefore not gluten-free. In the future, all of the Butterball gravy packets will be manufactured using rice flour.
