HAPPYBABY PUFFS

HAPPYBABY has added two gluten-free varieties to its organic HAPPYBABYPUFFS line.

These Puffs are the first melt-in-your-mouth organic finger food for toddlers that helps them to learn self-feeding and they are the only gluten-free puffs on the market.  The puffs are rich in vitamin D and are the only baby snacks with added vitamin B and calcium.  They contain half the sugar of similar products and are free of artificial colors/flavors and GMOs.

A bit of buckwheat honey beat the leading over-the-counter children’s cough remedy in relieving kids’ cough and associated sleep troubles, a study has found.

But the research—though published in a respected medical journal—was funded by the U.S. honey industry. Its authors recommended further studies to confirm the results, while noting that safety and efficacy questions have arisen around over-the-counter kids’ cough medicines. “Cough is the reason for nearly three percent of all outpatient visits in the United States, more than any other symptom,” they wrote in the report. “It most commonly occurs in conjunction with an upper respiratory tract infection,” and often disrupts sleep.

Vitamin A Deficiency in Celiac Disease…Common Before & After Diagnosis

Vitamin A was first identified in 1913 because of its crucial role in vision.  Subsequent discovery of its many other duties show that a deficiency will cause a broad range of health problems.

Vitamin A is not a single compound but actually comprises a fat-soluble family of molecules that includes retinol, retinal, retinoic acid, and retinyl ester. The term vitamin A also includes certain plant carotenoids called provitamin A because they are dietary precursors of retinol.

Vitamin A is essential for normal vision and eyeball health, a properly functioning immune system, gene regulation, reproduction, embryonic development, health and protection of all the tissues that line the body, including skin and mucosa of the lungs, digestive tract, urinary tract, and genital tract, bone metabolism and normal growth and strong teeth in children.

Vitamin A Deficiency

The United States National Institutes of Health recommends testing vitamin A levels in people with celiac disease at diagnosis. This is because vitamin A deficiency is common in celiac disease. Deficiency can result from incomplete digestion, absorption, or metabolism.

Recipe: Cucumber Chickpea Bruschetta

When this Examiner saw a recipe for Cucumber Chickpea Bruschetta last week it was very intriguing.  We were celebrating the 4th with friends and I wanted to make something special as an appetizer.

Bruschetta made with cucumber as the based seemed easy and since there is no gluten-free bread needed it is pretty cheap to prepare.  Then a friend gave me two cucumbers from her garden and we had local salsa fresh from the farmer’s market in the refrigerator, so the plan came together.  This bruschetta is incredibly easy to make, customizable, refreshing and layered with flavor and texture.

Dip into some gluten-free delights at The Melting Pot

I’ll admit it – sometimes all I want to have for dinner is some fruit, cheese, and if I’m feeling extra adventurous, chocolate.  But fresh fruit dipped in chocolate and other savory items dipped in cheese?  Now you’re talking.

The Melting Pot is a delightful fondue restaurant that offers you all the cheese and chocolate until your heart’s content (they offer other yummy items too).  And now they have a special gluten-free menu, so you don’t have to worry about cross-contamination.

In a cheesy mood?  The Spinach Artichoke or Wisconsin Trio (request that the fondue be made with cornstarch) are must-haves.  The vegetables and apple slices provided are perfect dipping accompaniments.

Recall: Pure Base Garlic Spread

Pure Base is recalling the garlic spread – ready to spread & garlic spread  – concentrate because they may contain undeclared wheat & milk.   Both were distributed nationwide online & in stores.

Mark your calendars! Go gluten-free in Austin this September

Although gluten-free eating has gone mainstream (gluten-free products and health information have saturated the internet, grocery stores, and advertisements over the past few years, and being GF has even been named a top food trend for 2010) chances are, you may be the only person you know who has known food allergies.  This is why finding a community of supporters — other people who eat gluten-free as well — is so important in maintaining your diet and lifestyle, and being encouraged in your journey toward better health.  And what better way to gain support than attending an event dedicated solely too gluten-free living?

Well, mark your calendars for September 12, 2010 — it’s the Got Guts? 5K race and food fair for celiac awareness.  Held in Austin, Texas, Got Guts? will begin at 8:00 on the morning of the 12th, where participants can run in a 5K race, ending at the food fair — full of gluten-free food options.  Participating in the race is optional, however, and event-goers are welcome to only run, only visit the food fair, or do both!

Fourth of July gluten-free desserts

The Fourth of July is almost here and it is time for festive desserts.  When this Examiner saw that the recipe for Summer Berry Trifle on FamilyFun.com was easily converted to gluten free, it just had to be shared.  Schar makes a great gluten-free ladyfinger that can be purchased locally at Return to Eden.

If you would rather eat cake, then Jen Cafferty has a great recipe for a gluten-free flag cake.  New Harvest Naturals makes mini pound cakes that can easily be decorated with whipped cream and fresh berries to create individual flag cakes.  You can purchase New Harvest Naturals products locally at Return to Eden.

Regardless of what you choose to make, get creative and really wow your family and friends.  It doesn’t take much effort to produce a scrumptious gluten-free dessert that is a real crowd pleaser.

Celebrate the Fourth of July with a gluten free flag cake

Fourth of July is just around the corner and red, white and blue desserts will be in all the stores.  However, if you are on a gluten free diet, you will most likely need to make your own gluten free Fourth of July dessert.

One of the easiest desserts to make is an American Flag Cake.  Using a gluten free cake white or yellow cake mix (see brands below), prepare a 9″x13″ cake in a pan.  Allow the cake to cool.

Frost the cake with white gluten free frosting.

Wendy’s Updates Gluten-free Menu Again (Updated 6/24/2014)

Back in February I wrote an article on Wendy’s updated gluten-free menu.  I wrote the article mainly because they removed a lot of the salads that had previously been listed as gluten-free.  The menu has been updated again.  Fast food restaurants tend to change offerings based on the season, so I applaud Wendy’s for keeping us informed.

The current gluten-free menu for Wendy’s can be viewed here.  The Baja Salad has been added to the gluten-free list.  This salad contains much of the same ingredients that the Southwest Taco Salad did or does.  While the gluten-free menu still lists the Southwest Taco Salad, the regular online menu does not.
