Gluten-Free Romaine Salad with Pears and Brazil Nuts

This versatile salad makes a handsome first course and easily partners with soup, salad or sandwich. Magnesium/ selenium/ zinc laden Brazil nuts and pears naturally tone the bowel. Romaine lettuce is a digestion restorative, providing folic acid, vitamin K, potassium and calcium while carrots add beta carotene, a precursor of vitamin A.

Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • salt and pepper to taste
  • 2 cups romaine lettuce, washed and sliced into bite size pieces
  • ¼ cup carrots, sliced
  • ¼ cup celery, cliced
  • 2 fresh pears, washed, cored and sliced thickly
  • ¼ cup Brazil nuts, toasted and chopped

 

Equipment

Large serving bowl.

Process

Add oil, lemon juice, salt and pepper to a large serving bowl and mix with a fork. Add rest of ingredients and toss. Makes 4 servings.
