Gluten Free Recipe: Fall Applesauce Cake

With Fall in full swing, there is an abundance of apples floating around.  Not only are the grocery stores full of apples, but some of the local farms are as well.  Lynd’s Fruit Farm is one of my favorite places to pick apples with the kids. Since making applesauce is a family tradition, I make sure to purchase enough apples to make a crockpot full.  Once the applesauce is made, it can be frozen or used in other recipes, such as this Applesauce Cake.

How to Cut Your Gluten-Free Food Costs

We are all feeling the effects of rising food costs.

A recently published study appearing in the Journal of Human Nutrition and Dietetics, “Limited availability and higher cost of gluten-free foods,” found that gluten-free versions of wheat-based foods cost, on average from 76% to a whopping 518% more. Ouch!

The good news is that there are lots of ways you can cut your gluten-free grocery bill, while staying healthy on a gluten-free diet. Two of my favorite ways to lower my gluten-free food costs include

Gluten-Free Onion Ring Recipe

Deep fried gluten-free onion rings are a real treat! I don’t deep fry often but when I do, I use this recipe and either Vidalia or Walla Walla onions. They’re crunchy delicious.

Prep Time: 6 minutes

Cook Time: 20 minutes

Total Time: 26 minutes

Yield: 4 to 6 servings

Ingredients:

  • 2 sweet yellow onions, preferably Vidalia in season or Walla Walla
  • 1 cup gluten-free all purpose flour mix

Sweet Pot-Souffle Recipe

This is a great way to start the day on a sweeter note, without the sugars found in more traditional sweet morning fare—something that works great for those following a gluten-free–and even grain-free–lifestyle. It is packed with fiber, Vitamin A, protein and healthy fat. Use sweet potatoes or winter squash that has been pre-cooked to make preparation fast and easy–there should be plenty on hand, either before or after a Thanksgiving feast!  This is a dish that pleases young and old alike.

Serves 2

Ingredients:

• 1 cup cooked Sweet Potatoes or Winter Squash, skins removed

• 2-3 raw Eggs

• ½ cup unsweetened Almond Milk or Coconut Milk

• ½ tsp. ground Nutmeg

• ½ tsp. ground Cinnamon

• 1 tsp. Vanilla extract

When a recipe calls for soy sauce, be sure to use a gluten-free product. Same goes for hot sauce. I use Frank’s Red Hot Original sauce in my wing recipes.
