Twenty years ago, doctors told Jerry Shafir that his baby daughter, Kate, had celiac disease.

In 2007, when the FDA recommended a standard for gluten free foods, Shafir, who owns Kettle Cuisine, applied his expertise in the soup industry and experience in the celiac disease community to develop gluten-free versions, so Kate and everyone on a gluten-free diet could enjoy the same delicious, hearty and nutritious foods that other people take for granted.

The result was an impressive line of 10 different soups, chilies and chowders, six of which we tried – and loved: New England Clam Chowder, Angus Beef Steak Chili with BeansTomato Soup with Garden Vegetables, Thai Curry Chicken Soup, Chicken Chili with White Beans, and Chicken Soup with Rice Noodles. The soups are 10 ounces each and serve one person.

Taste, mouth-feel, aroma and ease of preparation surpassed expectations.

Seventy Percent of Canadians Support No Exemptions to Proposed Food Labelling Regulations for Allergic and Celiac Consumers

OTTAWA, Feb. 2 /CNW/ – Prime Minister Stephen Harper is being asked to act on the concerns of millions of Canadians with food allergies and celiac disease and listen to the advice of prominent national medical, consumer and health organizations and pass proposed federal food labelling regulations now. Gluten-free Super Bowl Recipe Round Up

Since the Super Bowl is this weekend, it seems fitting to round up all of the gluten-free recipes this Examiner can find.  We used to have fun hosting Super Bowl parties, but have since taken to just a quiet gathering.  When we hosted, some of my favorite dishes to prepare were: deviled eggs, seven layer dip, veggie tray, homemade dips (hot and cold), chili, wings from Allergy Free Foods, chicken nuggets from Applegate Farms, and brownies. Keep the menu simple and limit it to things you are comfortable preparing. No need to get stressed out on such a fun day of sports, commercials and of course gluten-free food.

Stand Up for Your “Gluten-free” Self!

Interesting experience over this past weekend.  I went to a restaurant that offers gluten free pizza and buns and inquired with the bartender if they had gluten free beer. 

He proceeded to inform me that there is no such thing as gf beer because gf beer isn’t REAL beer and was a bit jerky about the whole thing.  He informed me that he brews his own beer, so he knows what real beer is.

It’s That Time of Year Again! Losing Weight Gluten-free!!

Happy New Year Celiac Scoop friends! I hope everyone had wonderful Gluten-Free Holidays! My holidays were filled with family….friends….and delightful Gluten-Free Goodies.

Unfortunately…that means my jeans are now a little too tight, and I’m afraid to step on the scale at the gym. I’m sure many of you are in the same boat right now… But, let’s not get down about it. We all have to “splurge” once in a while… and let’s face it, one of the fun things about the holidays is doing just that. In December, we shop too much, we spend too much money, and we eat waaay too much.

But here it is! A New Year! New possibilities are ahead of us, and its the perfect time to develop healthy new habits. It shouldn’t be about going “on a diet” just to lose the holiday weight…it should be about making permanent lifestyle changes… It’s about living our healthiest! And living Gluten-Free and being healthy should go hand in hand. :)
