While we were there hanging out in the kitchen chatting with my Aunt Bryan and I started flipping through the Kraft Foods magazine “Food&Family” and Bryan kept picking out recipes he wanted me to make.  We do this often.  I’ll get a new magazine or cookbook and I’ll flip through it then give it to him to pick out what he wants to try first. I just want you to know that I don’t know and don’t claim to know how to cook everything. Some things I’m not interested in and some things…well, intimidate even me. Today, when I went to the grocery store, I was inspired by the produce. I didn’t really have a plan; I just put it all in my cart. I also grabbed a package of boneless, skinless chicken thighs as my kids love this as a protein.

I think that it’s great to have a stack of recipes on hand but at the same time, so much of it is just cooking. Can you guess all of cooking methods I used in the photo? They are shredding, marinating and grilling, steaming and roasting. Each item didn’t take very long so if you can multi-task, it’s easy to put together a dinner like this. Here’s how I did it:

Here’s a delicious recipe for beef stew which I have converted to gluten-free. To make it “with gluten”, use regular flour instead of the white rice and potato starch. The process and seasonings are the same.

We are very lucky to have quality beef right down the road, from Markegard Family Grass-Fed. The test is in the taste which truly delivered. It wasn’t too greasy, either, and was very tender.

Tacos! Drive thru beef and chicken, crunchy or soft may be our most familiar tacos – staples of a fast food diet. But if you’ve never had a fish taco, I content that you’ve never enjoyed the best taco of all.

From South America, across Arizona and up to Alaska, fish tacos are routinely on restaurant menus, even at airports and most home cooks have their very own favorite versions.

Fish tacos, in all their regional variations are a  culinary sensation.One you shouldn’t miss out on just because you don’t frequent these locales. They are incredibly easy to make at home.

Gluten-free tortillas are easy to find in local groceries.

This makes constructing a perfectly delicious gluten-free fish taco pretty darned easy in under 30 minutes.

The best fish tacos I have eaten are made with Alaskan halibut or mahi-mahi. Spicy coleslaw and fusion mayonnaise (spicy, often citrus flavored mayo)  are the icing on the cake, when it comes to dressing up a fish taco.
