Gluten reduced beer is brewed with water, malted barley, hops and yeast. Specialized enzymes used widely in the brewing industry are added to break down or hydrolyze the proteins in barley, including the gluten protein “hordein,” that causes adverse reactions in people with celiac disease.

Do gluten-free diets put people at a higher risk for excessive and dangerous exposure to inorganic arsenic, a known carcinogen? It depends on the food choices you make and how much, and what variety of rice you eat.
In their ongoing analysis of arsenic in our food supply, Consumer Reports researchers analyzed 223 samples of rice and rice based products typically found at grocery stores in the U.S. Consumer Reports is a non-profit, independent consumer safety organization founded in 1936.
The results of Consumer Reports magazine analysis were recently published in the November 2012 issue, Arsenic in Your Food. Virtually all rice products tested contained arsenic, from low levels to potentially toxic levels.

7 cups, peeled Grannie Smith apples, sliced 1/4″ thick- about 2 1/2 pounds
Try this easy, no-fuss method for making gluten-free hot dog buns.
Use mini loaf pans (5-inches long by 3 3/4-inches wide) to make perfectly sized hot dog and brat buns. You will need 3 to 4 mini loaf pans to make 6 to 8 buns.
1. Prepare your favorite gluten-free bread batter using a recipe or mix. Divide the batter between 3 or 4 mini loaf pans if necessary, filling each pan about 1/2 full. Smooth the top of each loaf with a small spatula dipped in water.
