Dreamy Gluten Free Chocolate Chip Cookie Balls Recipe

I’m not sure if I’ve ever talked about my parents’ obsession with moving change.

I lived in a total of 12 houses in the first 17 years of my life.

Now, you may not think that’s a lot, but when you factor in that 6 of those 12 were temporary houses while our next house was being complete, that’s a heck of a lot of packing and unpacking in a short amount of time.

Sometimes these temporary houses would have a full kitchen, sometimes they wouldn’t. Sometimes they had a bedroom, sometimes they did not.

To make the transition as easy as possible, my Mom would make hundreds of casseroles. From manicotti, cannelloni, lasagna, to Read More »

Easy Gluten Free Halloween Sandwich Cookies

Halloween Sandwich Cookies by Jen Cafferty

Looking for the perfect easy-to-prepare treat to take to a Halloween party? Or maybe you want to send something special in your children’s lunch?  These cookies are perfect because you can make them as you need them and you don’t even need to bake!  There is no need to make an entire batch.  Just keep the ingredients on hand and prepare a few cookies for whenever you need something cute, creative and delicious to take with you!

My baking life changed for the better when I realized that some of the canned frostings were gluten free (I use Betty Crocker). When they go on sale, I buy a few cans of various colors and flavors and keep them in my pantry.  Most versions are gluten and dairy free but make sure to read the labels carefully before making your purchase.  Of course, it is very easy to make your own frosting, but something about the ease of the can makes it even so much less daunting to make a baked good.  Or in the case of these cookies, assemble a baked good (you don’t even need to bake!). Gluten free Fruity Pebbles Cocoa Pebbles

Last year (almost to the day) I posted a recipe for  Fruity Pebble Treats after I had gotten “glutened” by eating a rice krispy treat – silly me for missing the MALT flavor ingredient (see my post about the new gluten-free Rice Krispies here).  So instead of making the same mistake twice, I followed the advice of one of my readers, Kristi, and made the crispy treats using Fruity Pebbles (I’ve also made them with the cocoa pebbles and both are awesome!).  Before making these I called Post to double-check that these two cereals were in fact gluten-free and was assured that they were gluten-free.  You can check out the original post here.

A few weeks ago I received an e-mail from Post with the following information:

Thought you might be interested in hearing that longtime favorite Post cereals, Fruity and Cocoa Pebbles, are gluten-free and can be enjoyed on their own or in gluten-free treats!

They also generously sent me a box of each the Fruity Pebbles and Cocoa Pebbles to review.  I decided that I would make something with the Fruity Pebbles because as I found out last year Bryan really really likes the Cocoa Pebbles and pretty much Read More »

Gluten Free Product Review: Gefen Vanilla Wafers

Gluten Free Works Jennifer Harris

It has finally happened…the gluten-free answer to the vanilla wafer has been discovered and it is the vanilla cookies made by Gefen.  Now for the bad news…they are only available during Passover and they are made in Israel.

Gefen Gluten Free Vanilla CookiesWhile strolling the aisles at a local Super Target we discovered Gefen’s vanilla cookies on clearance for $3.90 per box. What really caught my attention was the Celiac Disease Foundation logo on the box.  The cookies are made from: potato starch, sugar, whole eggs, palm oil and vanilla.  Somehow we just knew they were going to taste amazing and they do.

These cookies remind me of a vanilla wafer crossed with Read More »

Recipe for Gluten Free Peanut Butter Sandwich Cookies

It appears to be cookie season! There are cookie sales going on for Girl Scouts, Kansas City area schools, and 4-H clubs.
Looking at all of those tasty offerings is enough to bring a tear to any gluten free eye because they are off limits. Well, wipe that tear away! Here is a solution to the I-can’t-order-these-cookies-because-they’re-full-of-gluten blues.
