These are mostly sugar-free because I used chocolate chips instead of a sugar-free alternative like carob chips. Substitute carob chips for the chocolate chips and you have yourself some delicious sugar-free cookies.

The cookies are made with Isomalt, which is a sugar substitute that is suitable for those who suffer from diabetes. Isomalt also has only half the calories of sugar, however it is suggested that adults should not consume more than 50g per day and 25g for children. I first learned of Isomalt while I was in my Baking and Pastry course at school. This recipe for Gluten-Free Gingerbread Men is adapted from a recipe by Jacqueline Mallorca, “Rice Flour Gingerbread Cows”, featured in her fabulous cookbook, “The Wheat-Free Cook”.

This version is corn free as well as gluten-free and is extra-extra gingery- so cut back on the ginger if you like.

Welcome to Monday, December 12, 2011.  Only 13 days until Christmas!  For all of you out there (this includes me) who haven’t finished your shopping, it is time to get busy!   Right now I am out running 8-10 miles to help motivate myself to knock out the rest of my shopping later on today.  Not sure yet if that will include in person or online shopping – it depends on how I feel.

I loved the idea of gifting my homemade cake stands to friends and families for the holidays. (Thanks everyone!)

Thing is – you can’t really give a cake stand to someone without having treats on it, especially if they know that you love to bake.

Looking for the perfect easy-to-prepare treat to take to a Halloween party? Or maybe you want to send something special in your children’s lunch?  These cookies are perfect because you can make them as you need them and you don’t even need to bake!  There is no need to make an entire batch.  Just keep the ingredients on hand and prepare a few cookies for whenever you need something cute, creative and delicious to take with you!

My baking life changed for the better when I realized that some of the canned frostings were gluten free (I use Betty Crocker). When they go on sale, I buy a few cans of various colors and flavors and keep them in my pantry.  Most versions are gluten and dairy free but make sure to read the labels carefully before making your purchase.  Of course, it is very easy to make your own frosting, but something about the ease of the can makes it even so much less daunting to make a baked good.  Or in the case of these cookies, assemble a baked good (you don’t even need to bake!). Gluten free Fruity Pebbles Cocoa Pebbles

Last year (almost to the day) I posted a recipe for  Fruity Pebble Treats after I had gotten “glutened” by eating a rice krispy treat – silly me for missing the MALT flavor ingredient (see my post about the new gluten-free Rice Krispies here).  So instead of making the same mistake twice, I followed the advice of one of my readers, Kristi, and made the crispy treats using Fruity Pebbles (I’ve also made them with the cocoa pebbles and both are awesome!).  Before making these I called Post to double-check that these two cereals were in fact gluten-free and was assured that they were gluten-free.  You can check out the original post here.

It has finally happened…the gluten-free answer to the vanilla wafer has been discovered and it is the vanilla cookies made by Gefen.  Now for the bad news…they are only available during Passover and they are made in Israel.

What really caught my attention was the Celiac Disease Foundation logo on the box.  The cookies are made from: potato starch, sugar, whole eggs, palm oil and vanilla.  Somehow we just knew they were going to taste amazing and they do.
