Easy Gluten Free Meal Recipe: Picadillo

Fall is the time of year when we need quick and easy, nutritious comfort foods to get us through our hectic lives.  Picadillo is a traditional Cuban chili.  You can make it with less spice (cut back on the cumin, chili powder and garlic) and the children will love it.

Picadillos have some spice but also sweetness.    This can be served over Read More »

Homemade Monster Fudgesicles: Gluten-free & Dairy-free Recipe

(My monster fudgesicle – gluten and dairy free! Happy Summer)

I’m always up for making things at home (beef jerky, granola bars, ice tea, etc.). I know there is convenience in buying many of these things, but I rather enjoy making things at home. One it’s a challenge for me, two I know exactly what is going into my food. I love making gallons of ice tea at home because I can control the amount of sugar (or honey, or agave) that goes into my tea. It is truly amazing how much can be found in a gallon of store-bought ice tea.

We don’t buy much ice cream at the store and I don’t ever make it only because I do not have an ice cream maker. Oh, how I wish I had one. Instead I make pops. We bought two packages of Monster Popsicle Molds (I found mine at Marshall’s/T.J. Maxx) which can be purchased from Read More »

Gluten-Free Round Up…Seasonal Pumpkin Recipes

gluten-free-pumpkin-recipesFall is here and that means pumpkins are starting to appear on your neighbor’s door step and in grocery stores, which is the universal signal to start carving and cooking pumpkin. Why is it most of us tend to cook with pumpkin only around Halloween and Thanksgiving?  Pumpkin is loaded with vitamin A, fiber and it is low in calories, so we should find ways to work it into our diet throughout the year.

Pumpkin is very versatile to cook with, so it can be used in both sweet and savory recipes.  This Examiner did a little research for gluten-free pumpkin recipes and was amazed at all of the drool-worthy recipes we found.  Listed below are just a fraction of the gluten-free pumpkin recipes available online.

Gluten Free Chocolate Chip Zucchini Mini-Muffin Recipe

Gluten free chocolate chip zucchini mini muffinsZucchini is a veggie that you can easily add to just about anything, and that’s pretty much what I’ve been doing with it. Grated, it makes a wonderful “raw” pasta substitute, I love it lightly stir-fried with other veggies, it’s delicious sauteed and added to salads, omelets, or whatever else is cooking, and then of course there’s always zucchini bread. My grandmother used to make it every summer. She would bake it in loaves, and then sandwich softened cream cheese between thin slices. It tasted like cake, and I suppose it practically was the way she made it. YUM.

I started looking online for gluten free zucchini bread recipes, and I came across some zucchini mini muffins with chocolate chips over on Elana’s Pantry. I love that website, and I have her Gluten Free Almond Flour cookbook, which I use regularly. She now also has a Gluten-Free Cupcakes book, which is now on my wish list, if anyone is feeling generous.

But I digress. Here is the original Gluten Free Zucchini Chocolate Chip Mini Muffins recipe, and the only things I changed were my typical substitutions using Read More »

Sweet Summer Salmon Recipe

It’s been a hot summer these past few days in NY. When the heat is beaming, one of my favorite kinds of meals to enjoy is fish on the grill because it doesn’t leave me feeling heavy.

To me, summer is all about enjoying fresh ingredients. Fruit and veggies are at their prime and I always look forward to the first long island corn on the cob. I think my family would honestly be happy eating watermelon every night for dinner; this being a summer tradition I also love.

Raw Spinach Pesto Pasta

Since summer weather hit, most of my evening meals consist of spiralized veggies topped with some kind of yummy sauce. Thankfully, I’m not left to my creativity alone. I’ve had lots of help from our Raw Foods Thursdays participants.

Here are a few posts that you’ll want to check out:

Do you have a spiralizer yet? If not, let me highly recommend that you get one. I guarantee that it won’t become just one more kitchen gadget that you need to find room to store once the newness wears off. I use mine almost on a daily basis. Not only does it give you creative ways to use veggies but it increases your vegetable consumption, because squiggly veggies are just so much more fun to eat than veggie sticks!

I’ve been wanting to share this raw pasta dish for a while. It’s super easy to make and even more fun to eat! I hope you enjoy it! Read More »
