Since I received the world’s greatest fettuccine noodles in the mail (thank you Cappello’s Gluten-Free), I was determined to make nothing but the classiest sauce to go with them. But, the problem is…I’m not a classy cook. I already apologize for giving you this recipe, because it is so good, you literally won’t be able to stop eating it. It’s also super easy to make, and will help you to impress any guests that may enjoy it as well (that’s if you are willing to share, of course).
I must preface this recipe with the fact that up until this point, I did not think I liked quinoa. The main reason for my dislike of this seed was that I had a poorly prepared dish with it last year and thought that no matter what, the little gluten-free gems could never taste good. Welp folks, I was wrong. This easy quinoa recipe can be used as an alternative to gluten-free pizza dough and will rock your taste-bud’s world.

Second step – make sure you have the rest of the ingredients for this amazeballs dish (literally, it’s amazeballs because it has two types of balls in it – gnocchi and chicken sausage meatballs).

So you’re diagnosed with Celiac Disease or a Gluten Sensitivity and you’re all like, “It’s the end of the world,” and you proceed to rant about how a life without gluten is not a life worth living. Even though you might want to listen to R.E.M. on repeat and binge over your last plate of fried chicken wings, you just need to get over it.
This all might sound a bit harsh to the newbie, but you need to cope, and once you do, you’re going to realize that eating gluten-free is quite possibly the best thing that could have happened to you. Here are three reasons why eating gluten-free doesn’t ruin your life:

I have come up with three fun recipes with a bit more class than what you usually see in the lineup.

The below Dear Abby letter is my take on someone who has just been diagnosed with Celiac Disease and doesn’t understand that the gluten-free diet is not a death sentence. I personally think that the gluten-free diet is a blessing of sorts…
I have spent the last few months visiting several doctors trying to figure out what is wrong with me. I’ve experienced everything from extreme irritability (causing several fights with my husband), to running to the bathroom over ten times a day! The state of my health was really starting to affect other aspects of my life. Read More »
The longest relationship I have ever ended is the one I had with gluten. After 19 years of a wheat-filled, breadstick-loving life, I was beginning a new chapter. I was going to be challenged by the changes I was about to make, but I knew they would only make me a better person when it was all said and done. But, before you reach the I’m better off without them part of a break up, you have to go through A LOT of crappy emotions, otherwise known as the 5 Stages of Grief: Read More »
WHY HAVEN’T I EVER THOUGHT TO DO THIS BEFORE?
I made a version of their recipe that is somewhat healthier using ground turkey instead of beef, plus this nifty recipe for Tomato Chutney.
