
Yummy turkey burgers! Healthy AND delicious!
Being sick at a young age and having to go to numerous doctors has made me more aware of my body. I know when I feel great and I know when something’s “off”. When I realized food was the culprit of my illness I was persistent until we got answers. There were times I wanted to back down and settle because I was tired of fighting, but thank god I didn’t.
Although I have an amazing team of doctors supporting me, I have learned I’m my own body’s expert. I know what foods make my stomach hurt and I know what makes it better. I have to be my own advocate. This is why I cut out dairy, red meats, and most recently, fish. As much as I loved these food {beside red meat} they weren’t making me feel good, so they had to go.
This summer there was something “off” about my stomach. I had tried a few medications, and went for an endoscopy, only to find inconclusive results; yet I still had bothersome symptoms. Everything hurt my stomach, except when I ate something allergen free. I thought it was eggs, but then I was getting persistent symptoms. I didn’t cut anymore food out of my diet because I couldn’t pinpoint what it was.
Eventually I was diagnosed with LPR reflux, otherwise known as “silent reflux.” This was the main reason for my unexplainable symptoms. Before this diagnosis I tried to make allergen-free meals. Ones that in addition to no gluten and dairy, were free of peanuts, eggs and soy. This is how this turkey burger recipe was born.
I apologize in advance as I have no exact measurements (just estimates). This is a creation my mom just eye-balled. The first time we made them she said, ”I’m never going to remember how to make these if they come out good because I’m not writing anything down.” However each time she makes them she adds a new vegetable. They come out better every time. Have some fun, and add what you like. I promise you can’t screw this recipe up!
Mom’s “Add What You Like” Turkey Burgers
1lb of ground turkey
1/2 sweet onion, finely chopped
1 red pepper, finely chopped
1 carrot, finely chopped
A few Broccoli heads, finely chopped
Homemade Dairy Free Pesto
Combine all ingredients. Separate meat and form into patties. Grill desired amount until fully cooked. Note: These burgers freeze wonderful. Freeze uncooked burgers and cook on grill when you are ready to enjoy!
Serve on a gluten-free bun or on its own. Either way you will be sure to love these gluten, dairy, soy, peanut, and egg free burgers!
