Gluten-free Recipe: Dairy-free Chocolate Cashew Cake (No Bake)

Dairy used to be my friend, but then we had to break up and it is the most difficult breakup I have ever had. Eliminating dairy/casein from a diet is more difficult than removing gluten because it is everywhere and it tastes really good.

Of course the best way to go about eliminating dairy is to look for substitutes and for me that made chocolate and cream cheese a priority. I never thought I would be able to like dark chocolate and now I love it. Cream cheese substitutes can be made from soy, which is also a no-no for me, but then came luscious cashew cream to save the day.

This no-bake cream cheese like cake from Runnin Srilankin features cashew cream as the base and uses Glutino’s chocolate vanilla creme cookies for the crust. If you are looking for a dairy-free and gluten-free chocolate fix, then you have come to the right recipe.

Ingredients

For the Crust:

  • 14 Glutino chocolate sandwich cookies
  • 4-5 tablespoons melted coconut oil

 

For the Filling:

  • 2.5 cups cashews soaked overnight (in water)
  • 3/4 cup almond milk
  • 2 teaspoons vanilla
  • 2/3 cup coconut oil melted
  • 1/4 cup unsweetened cocoa
  • 3/4 cup raw cane sugar or brown sugar

 

Topping:

  • 5 Glutino chocolate sandwich cookies, crushed
  • 3 tablespoons coconut oil
  • 2 handfuls dark chocolate, chopped

 

Instructions

For the Crust:

  1. Combine the Glutino chocolate sandwich cookies with the melted coconut oil and press into the bottom of a baking pan (I used a Springform)

 

For the Filling:

  1. Blend the soaked cashews and almond milk in a blender or food processor
  2. When smooth, add the vanilla, melted coconut oil, cocoa, and raw cane sugar and blend till smooth
  3. Pour on over the crust/base
  4. Chill for 3-4 hours

 

Topping:

  1. Crush the Glutino chocolate sandwich cookies and sprinkle on top
  2. Heat up 3 tablespoons coconut oil and drop in 2 handfuls of dark chocolate chunks and mix till “syrup” forms
  3. Drizzle syrup over crushed cookies
  4. Let it hang out in the fridge for a few minutes to an hour before cutting.
