glutenadrenalfatigueDo you feel tired all the time? Maybe tired isn't even strong enough of a word to describe the extreme fatigue you feel all day, every day. The problem seems to be pretty common place for those who eat a gluten-free diet.

Or maybe you have trouble falling asleep at night and wake up completely drained as if you were running a marathon in your sleep. Sure, you could chalk it up to a busy, stress-filled life, but the answer is more complex and hits closer to home that you even realize.

With Restaurant Week upon us in Washington DC I can’t help but think about how far the restaurant industry has come in the past few years when it comes to serving gluten-free customers!  Between the increase in demand for gluten-free products from the celiacs, the gluten intolerant and the fad dieters to the efforts of nonprofits like National Foundation For Celiac AwarenessCeliac Disease Foundation and the Gluten Intolerance Group, people living gluten-free can enjoy the delicious foodie culture that has spread across the country!

Easy Tamale Pie: Gluten-free and Dairy-free

A few years ago, I made a version of tamale pie where I made tamale dough and put something in the middle (honest, I can’t remember; it might have been chili inside). I’m not sure why that went out of my rotation. More recently, I made a tamale pie as more of an experiment with black beans and salsa on the bottom and tamale dough on top. That was a huge hit.

Trader Joe's has added to its ever growing line of gluten-free products with the recent addition of gluten-free Joe-Joe's, or cream filled chocolate cookies. Growing up, Oreo's were one of my favorite cookies, so I was excited to see if Trader Joe's version lived up to my childhood favorite.
