Grilled Shrimp Tacos with Corn and Black Bean Salsa

April 22nd, 2013 by Jenny Manseau

shrimp-0051I would grill all year-long if I could. This year we had so much crazy snow drifts that it was a bit impossible to do. I love my grill dearly…great flavors, you can grill pretty much anything, its outside with the sun and the fresh air, easy clean up, and less fats are used! We grill steaks, chicken, burgers, hot dogs, hot sausages, shrimp, fish, pizza, and veggies…tons of veggies! Last year I bought one of those little grill baskets for I think $3.00 and it works like a charm, especially for mushrooms.

Last week we got the tank refilled and have used it quite a bit since. We are both trying to get in better shape and eat healthier (a follow-up post to my I’m on a mission…post will appear soon, I promise!). So the grill comes in very handy for (more…)

One Dish, Three Meals – Mexican Style!

November 14th, 2012 by Candice Rose Clifford

I have never viewed being on a gluten and dairy-free diet as restrictive. Of course there are many foods I can’t have, but there are many more foods I can enjoy. However, more so than I did before I went gluten-free I get in phases where I feel like I’m eating the same foods. This is especially true since I have had to restrict my diet even more due to acid reflux.

When my parents came up last time my mom brought me two 1lb containers of ground turkey. I had made a meatloaf with one and had been enjoying the frozen turkey burgers my mom had made, but with my last (more…)

Tacos! Drive thru beef and chicken, crunchy or soft may be our most familiar tacos – staples of a fast food diet. But if you’ve never had a fish taco, I content that you’ve never enjoyed the best taco of all. From South America, across Arizona and up to Alaska, fish tacos are routinely on restaurant menus, even at airports and most home cooks have their very own favorite versions.

Fish tacos, in all their regional variations are a  culinary sensation. One you shouldn’t miss out on just because you don’t frequent these locales. They are incredibly easy to make at home.

Gluten-free tortillas are easy to find in local groceries. This makes constructing a perfectly delicious gluten-free fish taco pretty darned easy in under 30 minutes. The best fish tacos I have eaten are made with Alaskan halibut or mahi-mahi. Spicy coleslaw and fusion mayonnaise (spicy, often citrus flavored mayo)  are the icing on the cake, when it comes to dressing up a fish taco.

Here’s a recipe for my version of gluten-free fish tacos, just in time for Cinco de Mayo. Add a side of homemade guacamole and pico de gallo and be prepared to enjoy. Viva tacos de (more…)

Gluten Free Works Jennifer Harris

Gluten-free tacosWe shop at Trader Joe’s at the Forum about once a week and we are always scanning the aisles to see what gluten-free products we can find.  On a recent trip we discovered their taco seasoning mix.  It has a ‘g’ on the front of the package and it is only .79 cents a pack, so we decided to give it a try. Gluten Free Recipe: Meat Free Monday Tacos

March 1st, 2010 by Kaitlin Fleming

Its meat free Monday today and I’m making tacos tonight for dinner. I’ve been experimenting with tofu a lot lately, sometimes succeeding and other times not so much.

I’ve found that the crucial detail to remember is that it important to cook the tofu in very flavorful sauces and seasonings. Tofu absorbs whatever flavor you cook it in.

Tacos are one of my favorites foods that can be made gluten free and vegetarian very easily. I use corn tortillas over the gluten free ones you can find because I find they taste better and always make sure your sauces are gluten free. (more…)
