It has finally happened...the gluten-free answer to the vanilla wafer has been discovered and it is the vanilla cookies made by Gefen.  Now for the bad news...they are only available during Passover and they are made in Israel.

Gefen Gluten Free Vanilla CookiesWhile strolling the aisles at a local Super Target we discovered Gefen's vanilla cookies on clearance for $3.90 per box. What really caught my attention was the Celiac Disease Foundation logo on the box.  The cookies are made from: potato starch, sugar, whole eggs, palm oil and vanilla.  Somehow we just knew they were going to taste amazing and they do.

Gluten free biscottiThis is often how things work with me. I decide at some point that I want something. Pizza, cookies, a madeleine...and since I'm eating a gluten-free diet, I can't always go to the store to buy it. Or, maybe I can but it's not always good.

So it was, that day, when I really wanted a good biscotti. Believe it or not, I've never even made them, even with gluten! The next part of the journey began with finding the right recipe.

Instead of opening a jar of olive tapenade or a dip from the refrigerated section of the market, consider making your own. If you keep some key ingredients on hand and have a small food processor or blender, you are in business!

Gluten Free Olive TapenadeThe olive tapenade is so easy and so much better when made fresh. The beauty of it is that you can make a small amount if you are just having a few friends or more for a party. It can be used on top of chicken or even in a sandwich. And when you make it yourself, you can control the salt, garlic and rosemary (or even omit one of these).

I love to do research!  And in the gluten free industry that means sampling gluten free food.  

Today I am particularly happy to be sampling Joan’s GF Great Bakes products recently introduced to the market; specifically the multi-grain English muffins.  She is updating her delicious line, which includes bialy’s, Italian bread, bagels, English muffins, Scicilian pizza, corn toaster muffins, chocolate chip cookies and calzone, by adding double chocolate muffins, crumb cake, and multi-grain English muffins.

Gluten free soft pretzelsThere is just something about a warm, soft pretzel that reminds me of my youth.  Watching the Cubs play at Wrigley Field, enjoying the circus, or attending an amusement park just seemed better when you munched on a pretzel.
