Gluten Free Recipe: Cranberry Glazed Carrots

Cranberry Glazed Carrots

Ingredients:

2 lbs. fresh baby carrots (whole carrots, chopped into rounds, can be used as well)
½ cup jellied canned cranberry sauce (Ocean Spray is gluten-free)
¼ cup butter or margarine
¼ cup packed brown sugar
1 tablespoon lemon juice
½ teaspoon salt
Place about 1” of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender. Drain in a colander and set aside. (more…)

Gnocchi can be intimidating to many people but with a good set of instructions and the consistency of dough, you’ll want to make it all of the time.

Although the base for gnocchi (pronounced nywak-ee) is potato, regular all-purpose flour is usually also added. When eating gluten free, you may feel like you’ll never be able to enjoy these tender dumplings again. But, there is hope. (more…)
