Tacos! Drive thru beef and chicken, crunchy or soft may be our most familiar tacos - staples of a fast food diet. But if you've never had a fish taco, I content that you've never enjoyed the best taco of all. From South America, across Arizona and up to Alaska, fish tacos are routinely on restaurant menus, even at airports and most home cooks have their very own favorite versions.

Fish tacos, in all their regional variations are a  culinary sensation.One you shouldn't miss out on just because you don't frequent these locales. They are incredibly easy to make at home.

Gluten-free tortillas are easy to find in local groceries. This makes constructing a perfectly delicious gluten-free fish taco pretty darned easy in under 30 minutes. The best fish tacos I have eaten are made with Alaskan halibut or mahi-mahi. Spicy coleslaw and fusion mayonnaise (spicy, often citrus flavored mayo)  are the icing on the cake, when it comes to dressing up a fish taco.

Here's a recipe for my version of gluten-free fish tacos, just in time for Cinco de Mayo. Add a side of homemade guacamole and pico de gallo and be prepared to enjoy. Viva tacos de (more…)

Renowned chef, restaurateur and television personality, Chef Walter Staib, regularly includes gluten-free recipes on his PBS show, "A Taste of History."

His City Tavern in Philadelphia is a faithful recreation of an original 18th century tavern where Chef Staib brings history to life with his wonderful dishes. He has made numerous appearances on local and national cooking shows, such as The Food Network's Best Thing I Ever Ate and Iron Chef.

Chef Staib is the culinary ambassador to Deborah Heart & Lung Center, a hospital in New Jersey. He develops heart healthy recipes approved by nutritionists for a heart healthy diet, and then appears weekly on CBS to demonstrate them.  We were thrilled when Chef Staib offered to provide Glutenfreeworks.com one of his incredible gluten-free recipes. My Family’s Favorite Gluten Free Eats: Seafood

Since I am frequently asked what gluten free foods my family eats I decided to start an article series called My Family's Favorite Gluten Free Eats. When people first discover that my family is gluten free they automatically assume we have a difficult time finding things to eat. While it is true that gluten free convenience foods are not always readily available (or palatable for that matter), there are always an abundance of naturally gluten free whole foods to choose from at every market.

Grilled Swordfish and Mango Salsa Recipe

gluten-free swordfish mango recipeFish is one of my favorite things to eat, but sadly I don’t cook it enough. We eat a lot of sushi in our house because Bryan isn’t a huge fan of fish when it is cooked, except for swordfish.  He’s eaten a few cooked fish dishes that I’ve made but like I said, I don’t cook it often enough.

A few months ago we went to a local restaurant because he was craving swordfish.  He had his grilled with a bruschetta topping to it while I had a delicious piece of mahi-mahi with a mango salsa on top. He was a bit jealous of my salsa and wasn’t such a fan of the bruschetta. I promised him the next time it is on sale we would pick up a piece and I would cook it however he wished.  He asked for it to be grilled with a mango salsa, similar to the one I had on my mahi-mahi.

Lucky for him, swordfish was on sale this week! So keeping true to my promise we (more…)
