Ahhh, ice cream. Even better: salty and sweet ice cream. The combination of salty and sweet is one of my favorites. I love taking a bite and not knowing exactly what it will taste like.

Also, in case you were wondering, I use this Kitchenaid ice cream attachment for my stand mixer. It works great - during the summer, I keep the bowl frozen in the freezer so that any time I'm in the mood for ice cream, I can grab it and make a refreshingly cool treat immediately.

I finally ate the last of this last night, and I'm really sad that it's gone. It was the perfect ending to the last weeks' worth of dinners.

I guess I'll just have to make some more.

I am a firm believer that ice cream is appropriate at any time of year, even when it's -20' outside (although it never gets quite that cold here in the Pacific Northwest), but it is especially precious and fulfilling when the sun is blaring and you've been playing outside all day.

4-Ingredient Vegan Ice Cream Sandwiches

I get given boxes of chocolates by my mother-in-law occasionally, but they always have wheat in.  Added to that the amount of dairy in chocolates is enough to cause me trouble.  I used to squeeze all the chocolates in a mixed box to find the ones that were firm (fortunately husband loves soft-centred chocolates) but mostly now I have just given up buying chocolates.

We have had about three hot days this summer, and thoughts turn to ice-cream.  I keep coming across people posting about chocolate sorbet.  This seemed a great way of having two types of treats at once.

This sorbet is very intense, and one small scoop is enough for me.  It would be great with raspberries or other (more…)

Another very creative recipe from Shirley over at Gluten Free Easily just in time for the warm summer weather and one that will satisfy your sweet tooth.  What this Examiner likes most about this recipe is that it can be modified to be dairy free.  This Examiner is trying desperately to stay away from dairy-based ice cream this summer and now there is the perfect excuse to start experimenting in the kitchen.
