New Gluten-Free Dairy-Free Bread Recipe

Here's our latest and favorite gluten-free (and dairy-free) bread recipe. This gluten-free bread has a terrific springiness and is neither too dry or too wet. And, it has a wonderful yeasty flavor and calls for simple ingredients that are easy to find.

When followed exactly this recipe is consistently dependable. The batter rises quickly and as the loaf bakes it doesn't bubble over the sides of the pan. As it cools it doesn't cave in.

It's highly recommended that you use a good kitchen scale to weigh ingredients, don't substitute with other gluten-free ingredients and use an instant read digital thermometer to know when your bread is done. And if you have a good stand mixer that helps too.

Gluten-free Homemade Ranch Dip or Dressing Recipe

I was sitting at the table, reviewing one of my recipes which had not been tested yet for my cookbook. Ranch dressing is one of those items you would assume would be gluten-free until you look at the label. Then you also might see all of the other ingredients that aren't so appealing.

My kids are big fans of ranch dressing so I thought, why not try it right now?  I normally don’t make everything from scratch but I was curious to see if it was worth it to make my own.

Assuming you have the ingredients in your kitchen (which I usually do), this can be whipped up in less than 5 minutes. It’s always better if it sets but if you can’t wait, don’t worry, it’s still great.

And it's all because she is gluten-free and casein-free.  Actually, the real reason is because many media "reporters" are vicious and misinformed. Their lack of concern for the truth and focus on sensationalism damages people like Cyrus, the gluten-free community and our society as a whole.

Continuing with part three of my favorite gluten-free products from Expo West, here are my picks for: cheese, granola and snacks.  There were many contenders in these categories, so I limited my list to the top contenders.  All of these products should start arriving on store shelves over the next couple of months.

Cheese

  • Daiya Foods - launched their wedges in three flavors: jack, cheddar, and jalapeno garlic havarti.  If you are looking for a plant-based 'cheese' that is free of dairy and soy then you have come to the right place.  Daiya already makes shredded cheese that is great to bake with, but isn't meant for eating out of the package.  These wedge cheeses can be sliced and eaten right out of the package. They are much softer than I had anticipated, so I could easily press it down with my finger.  The cheese is creamy and would be great to spread on crackers, or to use as spread on sandwiches.  I really liked the spicy kick of the Havarti, the Cheddar had great flavor, and the Jack was just OK. Yesterday I mentioned that I was trying something different. I love Elana Amsterdam's recipe for gluten-free chocolate chip cookies, only I make it with coconut oil instead of grapeseed oil and maple syrup (the good stuff!) in lieu of agave because I hate agave. But everything else is the same, unless I sub out a handful of the almond flour for coconut flour. This makes more of a dense, soft cookie that doesn't spread when baked.

I'm the kind of person who usually wants something sweet after dinner, and chocolate should be involved somehow. When I don't have a healthier alternative, I eat junk. I decided to stop buying junk earlier this year, so I make this recipe all the time.

While eating these cookies, I get ideas. Such as, what would they be like as a crust? Could I make them bigger and really thin, then shape/roll them like brandy snaps? How would they do sandwiched together with chocolate ganache or some other kind of filling? And so on.

Instead of just making more chocolate chip cookies, yesterday I decided to see if I could bake the dough as one big rectangle and make bar cookies out of it. (more…)

  • Justin's - has turned their line of squeezable peanut/nut butters into three candy bars: Milk Chocolate Peanut, Dark Chocolate Peanut, and Milk Chocolate Almond.  They taste like a healthy version of a snickers made with quality ingredients and packed with protein. (more…)
