I Got Glutened and It’s My Own Fault!

no glutenI sit here writing this post from my bed. It’s 9:39pm and I have been in bed since 4:30pm. My tonsils are so big it hurts to swallow and I feel like I have been in a boxing match where I lost, severely.

I used to get sick like this all the time before I was diagnosed with coeliac disease and I am starting this think that my immune system is a wreck again.

Why? Because I have been slack. Many of those out there with coeliac disease will think I am stupid. I am stupid.

Fall is here! My favorite time of year. At school we have a Starbucks on each campus I see everyone enjoying the pumpkin muffins, pumpkin coffees etc. and it drives me crazy that I can just run in and grab one of those delicious looking muffins with the cream cheese on them… (more…)

Gluten-Free Parmesan Crusted Chicken Recipe

I saw an advertisement on TV for Hellmann’s Mayonnaise with this recipe. Whilst it sounded, let’s say interesting, I was intrigued and had to try it.

The first time I tried this recipe I bought some gluten free rice crumbs but I found them too crunchy with an almost sand type texture. The next time I cooked this recipe I therefore made my own breadcrumbs by blending a piece of frozen gluten free bread. It turned out really well, the chicken was very tender and it tasted awesome served with cornmeal mash (cornmeal mixed with milk and cheese) and stir fried vegetables.
