Prep Time: 20 minutes

Ingredients:

2 egg whites
¼ teaspoon salt
2/3 cup sugar
1 teas. Vanilla
small 6 oz. mini chips
2 drops of food color (any color – green is festive!)

Directions:

1. Preheat oven to 375°

gluten free cranberry hazlenut biscottiThese hazlenut biscotti have a warm, complex flavour with a lighter texture than my usual biscotti.  They have a hint of cinnamon but if you want a spicier flavour just add more spice, perhaps with mixed spice or ginger as well as the cinnamon.  If you like an iced biscotti, making a glace icing with icing sugar and ginger wine would work well.

My Food Philosophy – Finding My Inner Foodie

Yummy snacks can be simple and easy to make!

With all the working out I do it still surprises me how most days I honestly don’t get hungry. It’s something that confuses me, but something I’ve just accepted as a “normal” part of my life.

What helps me cope with this is focusing on how food is nourishing and will help me continue to be healthy. I continually look for ways to make my diet more “nutrient dense.” I’m happy to report that I have been increasing the amount of veggies I’m eating and have found more that I am enjoying! However the child in me is coming out because I have to hide them in my foods….whatever way works right?

Last night I made a delicious bowl of pasta with pesto, eggplant, and peppers. I added kale as well but I think it would of been better if I steamed the kale. Sorry for the absence of a picture, but I must say it was a beautiful {and colorful} creation! (more…)

We all know what it’s like to be in a non-gluten-free kitchen: whether it’s you or someone you know that is on a gluten-free diet, being in a kitchen that is not gluten free can be an uneasy experience. Maybe you share a kitchen with someone who does not eat gluten free. Maybe you’re having non-gluten-free friends over or going to a party at a non-gluten-free house.
