Fourth of July gluten-free desserts

The Fourth of July is almost here and it is time for festive desserts.  When this Examiner saw that the recipe for Summer Berry Trifle on FamilyFun.com was easily converted to gluten free, it just had to be shared.  Schar makes a great gluten-free ladyfinger that can be purchased locally at Return to Eden.

If you would rather eat cake, then Jen Cafferty has a great recipe for a gluten-free flag cake.  New Harvest Naturals makes mini pound cakes that can easily be decorated with whipped cream and fresh berries to create individual flag cakes.  You can purchase New Harvest Naturals products locally at Return to Eden.

Regardless of what you choose to make, get creative and really wow your family and friends.  It doesn't take much effort to produce a scrumptious gluten-free dessert that is a real crowd pleaser. (more…)


Fourth of July is just around the corner and red, white and blue desserts will be in all the stores.  However, if you are on a gluten free diet, you will most likely need to make your own gluten free Fourth of July dessert.

One of the easiest desserts to make is an American Flag Cake.  Using a gluten free cake white or yellow cake mix (see brands below), prepare a 9"x13" cake in a pan.  Allow the cake to cool.

Think you can't stay gluten-free during the holidays?  Truth be told, 4th of July can be particularly challenging, considering some of America's favorite dishes are full of gluten: pasta salad, hot dogs, bread, cakes and cookies.   But the goods news is, there are a ton of recipes available for those of us who eat allergen-free -- both foods that are inherently gluten-free, as well as quick and easy grain substitutions.  Just keep in mind that eating whole foods that are naturally free of gluten are easiest to prepare, usually most affordable, and also healthier than pre-packaged and processed GF foods.  (more…)

Keeping breakfast satisfying is tough. I find that if I make this Quiche on Sunday night, I can eat it all week long by re-heating it in the microwave.

This is one of the best desserts I’ve ever made and its incredibly easy and impossible to mess up and of course, gluten free.

I have been trying things out of Alicia Silverstone’s book, The Kind Diet: A simple Guide to Feeling Great, Losing Weight, and Saving the Planet. All of the recipes are vegan, but they also use awesome alternatives to using refined sugar all while still enjoying delicious treats. (more…)

Hummus: An Easy Healthy Homemade Gluten Free Snack

Hummus is full of nutrients, tastes delicious and it is naturally gluten free. Its a great option for dinner parties or snacks, and best of all its easy to make at home with a food processor.

You can serve it with veggie slices as well as pita slices to appeal to everyone's dietary needs.

The veggies I chose to serve it with were jicama, bell peppers and celery. Try to buy local veggies at any of the San Francisco Farmers Markets. Buying local produce is the easiest and cheapest way to get the freshest veggies.

It appears to be cookie season! There are cookie sales going on for Girl Scouts, Kansas City area schools, and 4-H clubs. Looking at all of those tasty offerings is enough to bring a tear to any gluten free eye because they are off limits. Well, wipe that tear away! Here is a solution to the I-can’t-order-these-cookies-because-they’re-full-of-gluten blues.

Gluten Free Recipe: Meat Free Monday Tacos

Its meat free Monday today and I’m making tacos tonight for dinner. I’ve been experimenting with tofu a lot lately, sometimes succeeding and other times not so much.

I’ve found that the crucial detail to remember is that it important to cook the tofu in very flavorful sauces and seasonings. Tofu absorbs whatever flavor you cook it in.

Tacos are one of my favorites foods that can be made gluten free and vegetarian very easily. I use corn tortillas over the gluten free ones you can find because I find they taste better and always make sure your sauces are gluten free. (more…)

These cookies contain no flour or starches, which means they are lower in carbohydrates and, since they are made with cashew butter, are loaded with protein. And, should you choose to use dark chocolate, they're also dairy-free. As always, be vigilant and check labels -- especially when purchasing chocolate, as some contain wheat and gluten.
