Recipe: Whip Up Some Gluten-free Goat Cheese Ravioli

When looking for a new gluten-free recipe, I stumbled across this one for Goat Cheese and Arugula Ravioli on the Whole Foods website, I knew this was a must.  Not only is goat cheese one of my favorite cheeses, I love ravioli (the gluten free kind of course).

Follow this basic recipe for a delicious gluten-free dinner that will make you feel as if you have been transported back to Italy (playing Italian music and drinking a glass of Chianti while dining will also help to set the mood). (more…)


Does your gluten-free section look like this??

Last December this Examiner put together a wish list for restaurants of gluten-free items we would love to see added to their menus.  Now it seems only appropriate as it is the beginning of 2011 to put together a wish list of gluten-free retail products we would like to see hit grocery store shelves.

Wings are quintessential half-time finger food. No wonder! Wings are economical, easy to make appetizers that everyone enjoys. Find a recipe in this collection of our best wing recipes from About.com Food and Drink Guides.

When a recipe calls for soy sauce, be sure to use a gluten-free product. Same goes for hot sauce. I use Frank’s Red Hot Original sauce in my wing recipes.

Rich Products, a food service business serving colleges and universities, schools from kindergarten through 12th grade and restaurants, had a busy 2010 with projected revenues of $2.9 billion. A report in Business First shows how 2011 should be even busier, with more than $3 billion in revenues due to acquisitions and expansions.  Gluten-free products are expected to play a part.

Rich Products is based in Buffalo with 1,300 local employees. The company has operations in over 100 countries. It expects to expand by about 10 percent annually in China and is moving into new markets like Turkey and could grow in the Philippines and Indonesia.

The company is coming out with a new line of gluten free products here in North America. According to the Rich Products website, the products include:

GLUTEN-FREE ITALIAN ROLLS – BAGS (06142)
Gluten-free Italian sandwich rolls that taste great and have a moist, tender texture. Packaged in resealable bags of 8, 4.4 oz unit weight

Like many of you, this Examiner grew up having Honeybaked ham for the holidays.  It is such an easy meal and one that is a real crowd pleaser, so it was disturbing to learn that even thought the ham and the turkey are gluten free the glaze used on each contained gluten making it unsafe for those on the gluten-free diet.

Back in 2008, Honeybaked reformulated their glaze and removed gluten and soy making the hams/turkeys safe for those on a gluten-free diet, but (more…)

Gluten Free Recipe: Fall Applesauce Cake

With Fall in full swing, there is an abundance of apples floating around.  Not only are the grocery stores full of apples, but some of the local farms are as well.  Lynd’s Fruit Farm is one of my favorite places to pick apples with the kids. Since making applesauce is a family tradition, I make sure to purchase enough apples to make a crockpot full.  Once the applesauce is made, it can be frozen or used in other recipes, such as this Applesauce Cake. It’s not easy to always find a gluten-free snack on the go, and when you aren’t the mood for the standard piece of fruit or crudite, Glutino offers a variety of nutritious snacks that are sure to leave you feeling satisfied.

Gluten-free Halloween Candy Lists

Halloween is quickly approaching and it is important to take the time to determine which candies are gluten free.  We tend to give out gluten-free candies at our house as there are so many great ones from which to choose.  My favorite gluten-free candy has always been Reese peanut butter cups, so we always offer those to our trick-or-treaters.  We couldn’t have been happier to learn that Nature’s Path created a treat-sized version of their Lemur Peanut Choco Drizzle bars and we will be purchasing some to mix in with the more recognizable candies.  (more…)

  

A wonderful new gluten-free product just hit the market in the United States – fresh from the Liguria region of Italy.  

Lucini Italia Company recently introduced Cinque e’ Cinque, a custom blend chickpea baking mix for Gluten-free Italian frittatas. This beloved Italian street food, also known as Farinata, has been a tradition in Northwest Italian pizzerias and bake shops for hundreds of years, where customers are known to stand in line for the first bites right out of the oven. Given its taste, nutritional benefits, variety of use and surprisingly easy preparation, it could soon become a staple for American gluten-free families as well.
